Wow this is good! Tastes just like buffalo chicken/hot wings in a creamy and filling soup! Fast and simple too! I am not usually a fan of anything with canned cream soups but when I tried this I just had to have the recipe. There are lots of recipes here on Zaar for substitutes for canned cream soup that could be used with great results. I have listed that this makes a gallon, actually it makes just shy of a gallon of soup. From TOH with tweaks from Mama.
I had 20lbs of Vidalia onions and a flavor in my mind. Sweet onions, sharp cheddar, and the richness of homemade chicken stock. Mmmm. DH had seconds. The 15yo had 3rds. Use as a side dish or, with bread and salad, as a light meal in its own right.
This is my sister Debra's recipe and my kids always love it when she cooks it for them. It is simple, easy, basic...and very good! You can add a vegetable to the creamy broth if you would like (frozen peas or broccoli), but we like it just the way it is. *I always double this recipe because they always come back for 2nd helpings.
As with most chowders, this is much better served the second day. Let it sit in the fridge overnight, reheat and serve! Sometimes I will add some crushed red pepper when I saute the onion. The Maine shrimp can be substituted with other small shrimp.
DO NOT BE FOOLED BY THE TITLE! Your kids, hubby, wifey, and everyone will eat it. I have made triple batches and could not keep it in the house. It's very smooth, and easily eaten by anyone with or without teeth. :) Fights have started over the leftovers.
I got this recipe off this group i joined and I've been dying to try it out. I haven't been to olive garden in over a year, so this is as close as i can get. Honestly, I could barely tell the difference, and it was my favorite part of eating there. The soup. This is SO good, and excellent with breadsticks! I garnish it with shredded parmesan cheese and fresh ground pepper. This is my favorite recipe for potato soup. It's a copycat of the one they use to serve at the St. Louis Bread Company (Panera). The recipe originally called for shredding your potatoes, but I never could get them to cook that way. I know they should cook faster, but I never could get it to work.
