This is my sister Debra's recipe and my kids always love it when she cooks it for them. It is simple, easy, basic...and very good! You can add a vegetable to the creamy broth if you would like (frozen peas or broccoli), but we like it just the way it is. *I always double this recipe because they always come back for 2nd helpings.
I just tried this recipe as a new meal tonight and it will definately be a keeper.

Everyone knows by now how much I hate Edith Gump but love her cooking. I only pretend to like her and take her phone calls so she will share her delicious recipes. This onion soup is ambrosia in a bowl.
I had 20lbs of Vidalia onions and a flavor in my mind. Sweet onions, sharp cheddar, and the richness of homemade chicken stock. Mmmm. DH had seconds. The 15yo had 3rds. Use as a side dish or, with bread and salad, as a light meal in its own right.
As with most chowders, this is much better served the second day. Let it sit in the fridge overnight, reheat and serve! Sometimes I will add some crushed red pepper when I saute the onion. The Maine shrimp can be substituted with other small shrimp.
I got this recipe off this group i joined and I've been dying to try it out. I haven't been to olive garden in over a year, so this is as close as i can get. Honestly, I could barely tell the difference, and it was my favorite part of eating there. The soup. This is SO good, and excellent with breadsticks! I garnish it with shredded parmesan cheese and fresh ground pepper.
