It doesn't get much easier than this and only 2 ingredients. Everyone who has tried these loves them. These can be made up ahead and frozen untill needed. The best part is you can make as many or as few as you need.

This is a recipe that I adopted and tried as a snack while playing cards with friends. I didn't have any canned refried black beans and used Recipe #65507 (minus the cheese on top) in this recipe. I also used Canned Basic Salsa (Recipe #39094) for the salsa with excellent results. I made 2 quesadillas and cut into 8 portions each, and they were gobbled up in no time. This is a quick and easy option for an appetizer, snack, or meal.
These came about as I quickly looked for a finger food to serve for a party. I used TheDancingCook's idea of combining cream cheese with the purchased crab salad and spread it on tortillas. They were a winner, and I thought I would share. Cook time is refrigeration time.
I adopted this recipe from the Recipezaar account in February 2005. When I finally had time to try it, I made a few changes to the recipe. I wasn't successful in forming the rice "log" around the veggies as described in the original instructions, and instead just spread the rice over the cream cheese layer and added strips of cucumber and red pepper as I rolled it up. It wasn't exactly sushi form, but it was still pretty and very tasty.
An easy appetizer that even the guys love. I like to use my own black bean dip, but purchased dip works fine. The jalapeno-flavored cheese dip can be used instead of regular nacho dip. You do want a thicker (but still spreadable) cheese dip...the sauces don't hold up for these roll-ups.
