    Ok, enough serious stuff-now to the fun reactions to Chili Cook-Off’s! This recipe, for fun, has been seen on the internet, author unknown, it’s origin is like the original RoadKill recipe. But that’s another story! If you can read these directions without laughing, then there's no hope for you. I was crying by the end. This is an actual account as relayed to paramedics at a chili cook-off in New Mexico. Note: Please take time to read this slowly. If you pay attention to the first two judges, the reaction of the third judge is even better. For those of you who have lived in New Mexico , you know how true this is. They actually have a Chili Cook-off about the time Halloween comes around. It takes up a major portion of a parking lot at the Santa Fe Plaza. Judge #3 was an inexperienced Chile taster named Frank, who was visiting from Springfield, IL. Frank: “Recently, I was honored to be selected as a judge at a chili cook-off. The original person called in sick at the last moment and I happened to be standing there at the judge's table, asking for directions to the Coors Light truck, when the call came in. I was assured by the other two judges ( Native New Mexicans ) that the chili wouldn't be all that spicy; and, besides, they told me I could have free beer during the tasting, so I accepted and became Judge #3.” Here are the scorecard notes from the event:

    This started as a recipe from friends, using instant coffee. They insisted that the quality of the final product is not affected by the quality of the vodka used. After switching to fresh coffee and "perfecting" the process, I learned that kahlua is a rum based liqueur. I have yet to make a batch with rum. **Update... September 13, 2006 -- I have made a batch with rum, and find it even smoother than making it with vodka.

    This soup is so good and rich, it'll make you slap your grandma! It's "Loaded Potato Soup" that's not for people on restricted diets. This soup is ideal for teenage boys who just had their wisdom teeth removed but want something substantial. I got the general idea from our office manager, who loves O'Charley's Loaded Potato Soup but was never satisfied with any of the clone recipes. We both have teenage boys and were looking for something more cheesy, more salty, thicker, etc. I always cook fresh onion and garlic in olive oil before adding it because my guys like it, but it's optional. Also, you can change the type of cheese depending on your preferences. We don't like the Velveeta in the original recipe because it makes the soup taste too processed and not homemade.

    This recipe makes even the biggest meatloaf critic ask for seconds!! I grew up eating this as a kid, and now serve it to my family. As a nice all-in-one meal, you can line the bottom of the loaf pan with quartered medium sized potatoes and place the meatloaf on top. The juices from the meat flavor and tenderize the potatoes as it bakes.
