I'm mostly a one pot kinda gal, but when I get around to being compliated--i.e. making a meant AND a veggie AND a potato--these look pretty stellar.

I get a lot of requests for this when the whole family gets together. It's so easy that I gladly make it for holidays like Thanksgiving and Christmas.

    Recipe #15363

A very easy but beautiful stuffing to serve with your bird for the holidays or anytime of the year.

    Recipe #47488

I have been doing this for years and I love it. Five minutes in the micro, then add your favorite toppings or ingredients and you have mashed spuds. I like to add some butter, maybe a little chicken broth, you can do sour cream, chives, herbs, cheese, bacon, cream or milk. Pretty much anything you want. I am listing my basic recipe, but use your imagination. You can add anything you want to these. Nothing like mashed potatoes in 5-8 minutes without the boiling water, peeling or the time involved.

This soup is simply wonderful to take away the chill! Make it vegetarian by eliminating the sausage and substitute vegetable stock for the chicken broth.

This Italian favorite pairs up especially well with the recipes I posted for Mediterranean Roasted Green Beans with Slivered Amonds recipe #21300 and/or Roasted Asparagus recipe #21148. From The Mediterranean Vegan Kitchen.

    Recipe #59917

Very simple potatoes that are tastier than you would think. They soak up the liquid and absorb all the flavor. Good, no fuss side dish.

    Recipe #49490

Fast, fresh and if you grow zucchini or crookneck squash, this recipe will become your favorite! Have had this recipe for years, no idea of source. Alter the seasonings to your tastes. Enjoy!

Yummy and different way to prepare cauliflower. A must try! Number of servings is a guess.

    Recipe #59965

A great little recipe I found on the back of a package of baby zucchini at Trader Joe's

The perfect combination, even my kids will inhale this!

    Recipe #44263

This is a wonderful side dish to perk up a weeknight meal of roasted chicken but it's also special enough for the holidays.

    Recipe #113837

This recipe was passed down from my grandmother. Better than the turkey, this stuffing is what reminds me of Thanksgivings around the family table. Rather than stuff the Turkey with it, I use it as a side dish.

    Recipe #149262

I am a big fan of pearl barley as it is cheap, tasty, healthy and very filling. This sounds like a great new way to enjoy pearl barley with a bit of an Italian flare. I originally found this recipe in the BBC Good Food Magazine.

    Recipe #359798

This recipe is one I tweaked a little from the Chocolate Biscuit Tearoom Vol II Cookbook. The Chocolate Biscuit Tearoom is in Trussville, AL.

    Recipe #263135

So easy to prepare. Healthier than french fries, these are a good accompaniment to many main courses.

    Recipe #82674

This makes such a nice side dish. I even like it cold as a salad the next day! 06/28/08 - UPDATE!! As I have already said, I like this for a salad too. Today I added some chopped egg whites, chopped black olives, some scallions (green and white). I then tossed with one tbls each of EVOO and red wine vinegar. Realllllly good! 07/24/08 - ANOTHER UPDATE! Wow, instead of using the fresh garlic, use roasted! I had several bulbs roasting while I was making dinner. They smelled SOOO good and that is when I figured it could only make this dish better. Just leave out the minced garlic and when the dish is finished, stir in about five squeezed out chopped cloves and then serve. YUM! 07/29/08 - STILL ANOTHER UPDATE! I have really gotten on the quinoa bandwagon. Put together two more recipes, so if you like quinoa as much as me, take a look. I'm not bragging, just sharing a good thing....recipe#316192 and recipe#316159.

I found this on an old recipe card. I haven't tried it but it sounds yummy.
