    Taco Seasoning Mix
    Handle

    Recipe #2642

    Select
    Kittencal's Taco Seasoning Mix
    Handle

After experimenting with many different spice combinations over the years for me this is the closest to the store-bought package taco seasoning --- I always increase this recipe 10x and keep in a glass jar tightly covered in my fridge to have ready for recipes, if you like lots of heat then adjust the cayenne pepper to taste or you may omit completely, if you can find some dried granulated tomato powder then add about 1-2 teaspoons with the mix, I purchase mine at a bulk spice store it really gives the seasoning a lift, the amounts stated are equivalent to one package taco seasoning mix -- don't save this mix to use only for tacos, add some in your recipes to kick up the flavor, it's even great in chili, ground beef mixture for casseroles, stew, soups, and add some into you hamburger mixture for burgers, I even add this to my Parmesan meatballs --- this also makes a great gift for the cook on your list just increase amounts and present in a fancy glass jar.

    Homemade Dry Onion Soup Mix
    Handle

This recipe is from www.kitchenmixes.com. It is a great substitute for the boxed onion soup mix. It equals one packet or about 1-1/4 ounces. You can add garlic powder or other seasonings if you wish. It also makes a great gift for cooks. Make up some packets of onion soup mix, add a soup ladel, soup bowls, soup spoons, recipes, and some non-perishable ingredients. Place in a basket or pretty box wrapped in a tea towel.

Kittencal's Buttermilk Poultry Brine (For Chicken or Turkey)
    Handle

You may never grill, fry or bake chicken again without using this brine first, it will produce the most flavourful juicy moist chicken you will *ever* have, it's a must for chicken and turkey breasts, and makes the best fried chicken on this planet! Plan ahead the chicken needs to marinade in the buttermilk brine for a minimum of 8 hours or up to 24 hours. This brine is enough to cover about 4 pounds chicken pieces. You can double the recipe and use it on a small whole turkey also, the cumin is only optional, if you are not a lover of cumin then you can omit but it really brings out so much extra flavor without being overpowering.... you will *LOVE* this brine! also see my recipe #225220 and recipe #148225.

Savory Steak Seasoning (for all types of meat)
    Handle

I got the original recipe on here (Steak Seasoning for the Steak House#18556 by Darin Craven). The orginal recipe is for restaurant use therefore has large measurements of the ingredients. At the suggestion of one of the reviewers, I scaled it down for home use. This seasoning can be used on any type of meat as well as on fish and poultry.

    Grilled Flank Steak
    Handle

This is a recipe that I got from my oldest son when he was a student at Purdue University in their Hospitality and Tourism program. This is the flank steak recipe that is served in the restaurant at the Student Union. Marinating time not included. This also works well on other cuts of steak.

    Heavenly All-Purpose Herb Blend
    Handle

I use this all-purpose balanced seasoning blend EVERY day! It's great on chicken, pork, beef, soups, stews, pasta salads, and just about any vegetable you can think of, especially fresh tomatoes and potatoes. I always double or triple the recipe, and keep it in a shaker by my stove. It can be made with or without the salt-substitute or salt, and still impart a delicious flavor.

This is a recipe provided by a chef from a company I used to work for. While it requires a 2 day marinade, it is well worth the wait. The sweetness of the pineapple juice along with the saltiness of the soy sauce makes for a fantastic flavor.

This marinade also works great with pork! You can also add in 1-1/2 teaspoons seasoned salt if desired, the longer you marinade the more flavor your meat will have, if you are not a garlic-lover then omit garlic.

I saw Tyler Florence make this on one of his TV shows, and it looked so good I had to give it a try. I have a very picky "other half" and he said this was the BEST he has ever tasted. For HIM to say that it must be good. I am putting the recipe here for safe keeping and to share a GREAT pork recipe with all of you!! Please let me know what you think. Oh, and be sure you use the BEST barbecue sauce!

    Stolen Spice Rub/ Seasoning Mix!

I don't know if you have ever been to Chicago, but should you go, have a bite of heaven and come to the Fairmont Hotel's Aria restaurant. It's expensive, but it's the best dinner you'll ever have. After I noticed the lack of seasoning mixes here, I figured I'd share this spice mix. It's for beef roasts, brisket, even steaks! I broke it down to teaspoons (originally the measurements were in cups) Enjoy!

This is a great spice to add to anything from soups to salads. I have friends that use it on their popcorn now. I like it on my eggs in the morning. Some people may want to add other spices at the grinding stage to make this spice with their own special twist.

Not sure where I got this recipe. Several friends have tried it and love it; they advised cutting the marinating time to one hour (the original recipe called for overnight marinating).
