Seafood is a passion of mine, its best if I catch it myself, but will eat all of it, cooked or not!

Salmon is my number one favorite "meat" so I'm always looking for a variety of ways to cook it. Here is another of several ways I like to prepare it. (I only make this with REAL maple syrup, so can't vouch for the results if you substitute.)

Recipe #102139

This again is one of my GO TO meals. Easy, quick, elegant and perfect for every day or entertaining. It is so flavorful and still so pretty when you serve it. It is light with fresh citrus flavors and a quick cooking dish which makes this a breeze to make. Serve this with some fresh bread, weather you make it yourself or not. I would love this with a nice citrus salad. Even a mix of mango, papaya, pineapple and kiwi would also be nice. Something that reminds me of summer. NOTE: This is a 4 step dish, but just read the recipe through ... it isn't hard trust me. Rice takes 5 minutes in the microwave (and you can use the same bowl you will serve it in), saute kale in 5 minutes, sear the scallops in the same pan let rest 5 minutes while you make some sauce ... again in the same pan and then serve all together. Makes clean up easy for a week night. A bed of flavorful rice, topped with tangy garlic kale, topped with fresh seared scallops and a wonderful lemon sauce to tie it all together. You can make each component on it's own, but this is wonderful all together. I hope you give it a try.

I've been making this "sauce" to serve over fish for years. I like it over simple pan fried fish, but you could serve it over crumbed fish too.

Shrimp and garlic. Great by itself as an appetizer, or served over pasta.

Crusty scallops--excellent! From Cooking Light.

Recipe #16855

A completely unique rich, and savory use of fresh scallops, asparagus, in a creamy champagne sauce. It sounds more difficult than it is. It is rich, but subtle in it's flavor. Don't expect spice or deep flavors, but it is great. Just follow the directions as is. Steamed asparagus doesn't work, canned artichokes don't work. It needs to be prepared right for the great flavor.

Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking. Blackened sea bass done on the barbecue grill. It doesn't get any better than this! Catfish fillets can also be used.

Recipe #237519

This is a wonderful crab dish, full of chunks of crab in a delicate cream sauce- no fillers here! This makes an elegant dinner entree for a special meal or can also be served as a first course. It can be made 2 to 3 hours ahead of when you want to serve it and refrigerated. Originally from a May 1983 issue of Bon Apetit magazine that featured Baltimore, Maryland.

This is from Fresh TV cooking show and is delicious. I did modify in that I subbed spring onion for 1 stick celery (finely chopped) and used sweet chilli sauce instead of sweet chilli and tamarind sauce.
