Oven baked potatoes with caramelized onion. This recipe can be made with simply one potato, two, or as many as will fit in your oven proof bakers. The recipe posted is for one to four whole potatoes. These also will re-heat nicely if there are leftovers. Baking time will vary depending on the size of potatoes. I always use a huge onion when making this so there is a lot of onion sauce.
I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.
Get more veggies in their diets and no one will be the wiser. This recipe makes a lot - 12 servings - so feel free to scale it down to fit your family. Or make the whole she-bang and freeze portions of it for later.
This is great using Banana Capsicum ( basically a small banana shaped red capsicum that looks exactly like a huge chili) as I find that the usual sized capsicums are a little too much. Anyway, a great recipe!
I have been making these for years, it's a family favorite! all ingredients are wrapped in a foil pouch then grilled for about 30-40 minutes, add in some cooked cubed ham for a complete meal, you could even make the packets well in advance then refrigerate until ready to grill :) Make certain to use only large heavy-duty foil for this and spray the inside of the foil generously!
This is one of those comfort foods my mom makes for me when I was sick as a child. I have always been "sickly" and had pneumonia quite a bit and had to even be home schooled for a while in 1st grade. I could manage to keep this down because it's pretty light and it made me feel special because she always made it at my request.
This is from a diabetic recipe newsletter in my email. These are most of the things we grow in our garden every summer (except the carrots), so I thought it would be perfect to try. This should go well at potlucks, picnics, and just a weeknight dinner with the fam.
