    Scrumptious Salmon

For me, salmon is total luxury, whether fresh or smoked. Having first tasted it in Inverness, and again on the Isle of Skye, I was 'hooked' for life. When buying fresh salmon, leave it to the last possible moment, and preferably cook it the same day. Make sure it smells briny and sweet, the flesh is firm to the touch, and if whole, that the eyes are bright, clear, and slightly protruding, the gills are bright pink and clean and the skin is shiny with tightly adhering scales. Enjoy these recipes, and while your salmon is cooking or chilling, check out this cool link to some artists' impressions of this wonderful fish: http://www.riverdale.k12.or.us/salmon/art.htm

From Ina Garten (Barefoot Contessa). This is a great dip for a party and is wonderful served with potato chips or crackers.

    Recipe #81805

Typically we serve this spread with breadsticks or crackers. But for a delicious change, put a spoonful onto some thick grilled slices of sourdough bread, then top it with a squirt of lemon and a few grinds of pepper. The creamy, pale pink spread, melting into the crevices of the crunchy toast is irresistible.

My mom's specialty when she has time to entertain.

A really easy and delicious dish, with a distinct lemon flavour.

Very classy salmon. One we have at least twice a month. This is SOOOO GOOOD!!!

    Recipe #17978

This is deLICious!! Lovely for lunch or dinner served with a tossed, crisp green salad.

    Recipe #21769

There's no real cooking time to this recipe - but there is 1 1/2 hours of 'setting' time in the refrigerator. This is a lovely appetizer.

    Recipe #63182

Sweet and spicy, the flavors in this salmon are wonderful year round! It can be either grilled or baked.

    Recipe #63326

This is such a simple way to dress up salmon. The olive oil helps the pepper to crisp up in the oven, adding texture to the fish. Despite the amount of pepper on top, the spice is not overwhelming, just nice. You must use freshly ground black pepper for this, which is fairly coarse, not the powdered black pepper.

I really love this pesto on fish, I like salmon but you could use any fish you like. Its nice served with simple baby potatoes and perhaps some mesclun or rocket with a seeded mustard dressing

    Recipe #67675

As usual, I'm not sure where this recipe comes from, but we make it for small dinner parties. The parcels look so elegant, but the recipe takes no time at all! I make my own pesto with basil and mint for this, but you could use a jar pesto. Fresh is so much nicer tho!

    Recipe #116838

A variation on scrambled eggs. Very tasty, and good for family or guests.

    Recipe #39955

This glaze its great on a few things, ham, chicken and of course salmon.

    Recipe #4444

This recipe comes from British Columbia cooking teacher Jane Baily. The steaks are moist with a real Mexican kick. Add green rice, a side salad, make the Margaritas and let the party begin!!!

    Recipe #57297

In Switzerland, rosti means "crisp and golden." The word has become symonymous with the country's famous potato cake. This potato cake makes a delicious cushion for ribbons of smoked salmon and lightly scrambled eggs. Simpley finish with a sprinkling of capers, diced red onion, chives and dill. This dish is fit for a king's breakfast!

I don't remember where I got this recipe but it is totally sinful! We eat ALOT of salmon and I am always looking for new ways to prepare it. This is really different and has a very rich taste. It would be an appropriate dish for a special night or dinner party but is easy enough for a work night.

    Recipe #31567

Salmon marinated in yoghurt and tandoori paste for 15 minutes, then quickly char-grilled for another quick and easy mid-week meal.

    Recipe #111831

Serve this with a nice green salad to complete the meal. It is one of my favourite weekend treats.
