    Scrumptious Salmon

    For me, salmon is total luxury, whether fresh or smoked. Having first tasted it in Inverness, and again on the Isle of Skye, I was 'hooked' for life. When buying fresh salmon, leave it to the last possible moment, and preferably cook it the same day. Make sure it smells briny and sweet, the flesh is firm to the touch, and if whole, that the eyes are bright, clear, and slightly protruding, the gills are bright pink and clean and the skin is shiny with tightly adhering scales.     My friend cooked this for us for dinner while visiting her. It's delicious. Remember an Aussie tablespoon contains 4 teaspoons. ETA I made this tonight using a whole side of salmon. I sprayed foil with oil, and wrapped the spepper sprinkled fish in it like a parcel. I cooked it in a hot oven for 12 minutes, then rested it for a few more. I made the sauce in a small pan and tossed the potatoes in the two tablespoons of oil that the salmon was to have been cooked in. The fish was so moist and the dish was delicious.

    As usual, I'm not sure where this recipe comes from, but we make it for small dinner parties. The parcels look so elegant, but the recipe takes no time at all! I make my own pesto with basil and mint for this, but you could use a jar pesto. Fresh is so much nicer tho!

    I love making this for dinner parties and any time really when salmon is available at a reasonable price. Serve with buttered toast or rye bread and slices of cucumber. Curing time not included. The sauce is like a mayonnaise and is quickly made using an electric mixer.

    These scones are a special treat, make full size with smoked salmon in between or make half sized scones and top each half with sour cream mix and smoked salmon to make a great appetizer. (these scones are also delicious served alone, hot, with butter or even cold.)

    This was originally posted by my cyber-friend Moxie; I was lucky enough to rescue it during a recent recipe 'adoption' drive. Her original intro read: "Sumac has a tangy, citrusy flavor and is very nice with the salmon & balsamic vinegar in this recipe. A little bird told me about the virtues of sumac (ok, it was Chef Canary Girl!), and now I'm a big fan. This recipe came from a website called Global Gourmet. Prep time includes marinating time, and cooking time will depend on the thickness of your salmon, heat of your grill, etc."

    This is such a simple way to dress up salmon. The olive oil helps the pepper to crisp up in the oven, adding texture to the fish.     I don't remember where I got this recipe but it is totally sinful! We eat ALOT of salmon and I am always looking for new ways to prepare it. This is really different and has a very rich taste. It would be an appropriate dish for a special night or dinner party but is easy enough for a work night.
