    Scrumptious Salmon

    For me, salmon is total luxury, whether fresh or smoked. Having first tasted it in Inverness, and again on the Isle of Skye, I was 'hooked' for life. When buying fresh salmon, leave it to the last possible moment, and preferably cook it the same day. Make sure it smells briny and sweet, the flesh is firm to the touch, and if whole, that the eyes are bright, clear, and slightly protruding, the gills are bright pink and clean and the skin is shiny with tightly adhering scales.     I don't remember where I got this recipe but it is totally sinful! We eat ALOT of salmon and I am always looking for new ways to prepare it. This is really different and has a very rich taste. It would be an appropriate dish for a special night or dinner party but is easy enough for a work night.

    This was originally posted by my cyber-friend Moxie; I was lucky enough to rescue it during a recent recipe 'adoption' drive. Her original intro read: "Sumac has a tangy, citrusy flavor and is very nice with the salmon & balsamic vinegar in this recipe. A little bird told me about the virtues of sumac (ok, it was Chef Canary Girl!), and now I'm a big fan. This recipe came from a website called Global Gourmet. Prep time includes marinating time, and cooking time will depend on the thickness of your salmon, heat of your grill, etc."

    This is such a simple way to dress up salmon. The olive oil helps the pepper to crisp up in the oven, adding texture to the fish. Despite the amount of pepper on top, the spice is not overwhelming, just nice. You must use freshly ground black pepper for this, which is fairly coarse, not the powdered black pepper.
