This dressing is posted in Recipe #226217. However, it goes so well with any mixture of vegetables and fruit, that I figured it deserved to have a listing of it's own. I've doubled the ingredients from the original posting. I've been putting this on EVERYTHING! Note: Cooking time is recommended chilling time.
After having something similar in a restaurant, I just had to start making these at home. Now I'm addicted! When they are in season, I substitute fresh blueberries and/or strawberries for the dried cranberries. Also delicious!
I got this recipe from my cousin's wife who brought to our annual get together. She was not specific on the amounts of the ingredients, but as most are vegetables you can go with your own taste. I have estimated how much of each was in the salad as best as I can. Feel free to criticize or make recommendations.
Deliciously different! The Catalina dressing adds a sweet flavor to this zesty Mexican salad. Tip: To prevent "soggy salad leftovers" (if you are sure there will be leftovers), then store the meat mixture and the chips separate from the greens mixture and toss together when serving at another time.
I got the basis for this recipe from my cousin's wife, who absolutely adores the taste of fresh basil! This is a great, simple summer pasta salad, with a nice light blend of flavors. FRESH basil is a must on this one!! This salad is great alongside BBQ chicken. Easy, and yummy!! Prep. time includes marinating time.
