This is the salad dressing I grew up with that my mom created. As a child, I didn't realize there were any alternatives. To this day, my mom's salad dressing is still a favorite. Very simple to prepare. If you make it a little ahead of time, it will allow the flavors to blend. I hope you enjoy it!
This is the best make ahead potato salad that I've ever come up with. The base of the recipe comes from the bottle of Hellmann's mayonnaise. No one in my family nor my DH's can even come close to this recipe and it's always gobbled up at any family event. I think the key is to making extra sauce and preparing this the day before. I got this recipe years ago from an online friend, and adjusted it to suit my family's tastes. It's such a great salad. I take it to potlucks all the time, and it's always the first thing gone! Great alone, or use it to stuff a tomato. Also, you can add grape or cherry tomatoes.
I adopted this recipe from Recipezaar and have since made the recipe. It's very good and the only change I made was using 1 teaspoon dried thyme, as I didn't have fresh in the garden. The original poster said this recipe was adapted from Michael Chiarello.
This potato salad was one of my Nonna's (grandmother) most-loved recipes. Our whole family (and it's big!) loves it and we always think of her when we make it. It is simple while still being full of flavour. The salad is best served warm or room temperature. You don't absolutely have to love parsley to like this dish, but it would help a little. :-) Please note: amounts are approximate - my grandmother never wrote anything down, so we go by taste. Feel free to adjust to your own preferences.
