A great casserole that you can assemble the night before and bake in the morning. I make this on Monday morning and have enough leftover for breakfast for most of the week. This works out well on school mornings.
This is our special occasion recipe - we use it for Thanksgiving and Christmas morning as it is easy to prepare the night before, my daughter is having her in-laws over this week and requested it for them. So maybe it is impress the MIL too. :) there are many variations of this recipe this one seems to work best for us.
Anytime I make this I have requests for the recipe. You can put it together the night before and just put it in the oven the next morning. I have substitued ham for the sausage and it also turns out good. It can also be made in the crockpot with success.
This breakfast casserole is fabulous - the cream of mushroom soup and sausage cooks up to taste like sausage gravy. I've never had so many compliments on a breakfast casserole before! This is best when prepared the night before and baked the next morning.
Another winner from the ladies at Gooseberry Patch--I've been making some version of this for YEARS!--and the family loves it no matter what I throw in the pan. The recipe calls for Monterey Jack cheese, but I've had equally good results with Cheddar or a mixture of Ched with Swiss or Provolone. And I've NEVER thawed the hash-browns (having not enough sense to actually PLAN much ahead it seems!), so you can folllow the recipe and thaw them, or fly by the seat of your pants and use them frozen. Also...if you add MORE meat, you'll have a main dish meal for a busy weeknight when everyone is flying in and out the door at a different time. My, my! All these choices!
A great Sunday morning brunch breakfast, and a different change from the usual bacon and eggs. This recipe can also can be baked in one casserole dish if desired, just bake a little longer. Please adjust the cheese, green onions, salt and pepper to taste.
