This is a wonderful mix that is quick to mix up and will keep up to 6 months when stored in a container with a tight-fitting lid. Use this mix to add zip to cake batters, quick bread, whipped cream, pancakes, muffins, etc. If the recipe calls for various spices, just add up the amounts and sub this spice blend. This is a wonderful, all-purpose rub that can be used on steaks, chicken, shrimp or fish. This makes up about 3/4 cup, and can be stored in an air-tight container so you always have some on hand. This particular mix can be made from spices that most people have on hand already!

Make a large batch of roux and keep it refrigerated or frozen. Refrigerated or frozen roux will keep well for up to two months and can be added in its cooled form directly to your soups or sauces for a little quick, thick pick-me-up! It is advisable to add cold roux to a hot sauce or soup.
Adapted from a suggestion in Dean Ornish's book "Eat More, Weigh Less". This is a nice nonfat substitute for cream cheese and doesn't have any of the chemicals and additives that nonfat cream cheeses usually contain. Be sure not to use yogurt that contains gelatin for this recipe. You could also add things like sundried tomatoes and grated carrots for more of a veggie spread, or chives in place of green onions.
Believe it or not this can be served as a side salad in a small bowl or mixed with greens. I like to have it as a condiment for your meat course or as an appetizer on crackers with liver pate or other meat. I haven't seen a vampire in my house so it must work!!!
