    I started making this to use in my daughter's chocolate milk, since I am not a fan of HFCS, and a teeny bottle of organic chocolate syrup was over $4. I double the batch and store in a 32 oz rubbermaid "chug" bottle. You can store this in the fridge in any CLEAN container with a spout for several months.

    This recipe is a favorite in our house. Many a friend & family have requested a copy of this recipe to take home after they've been over for dinner. I have also added seafood to this dish for a different twist. Once you have the main sauce made you can add whatever meat or seafood you desire. I have also added mushrooms and broccoli.     I came by this recipe completely by accident one day when I was making a red sauce for another Mexican-style dish, and when I tasted it I realized it was the perfect rich but mild enchilada sauce for me! Rich and flavorful, this one is a winner. It's fast and easy to make, and tastes much better than the canned variety. If you like your enchilada sauce spicier, add some minced jalapenos or some hot chili powder. I plan to do some canning this fall, and batches of this sauce in jars is on the list.

    My family's favorite blue cheese dressing--absolutely fabulous! It is even delicious made with fat-free sour cream, low-fat mayonnaise, and fat-free buttermilk.     Classic chocolate sauce. Very rich, and wonderful, as long as you use good quality chocolate. You can modify it by adding a tablespoon of Gran Marnier, Baileys, or any other flavoring to jazz it up a bit.
