I really enjoy falafel but I haven't had it since I started my weight loss 'journey' because when I get it at a takeaway shop I am never sure how they made it and how much oil has gone into frying it, etc. So, when I saw this recipe in the Autumn 2008 copy of BBC Easy Cook magazine, I decided to put it here so that I can learn to make my own.

    Recipe #323972

I saw this in a vegetarian cooking magazine and the photo looked so stunning I had to add it. It will be a hard sell to get my husband to try anything with beets but I love them so I will give them a shot the next time I am cooking for myself. You could probably use pomegranate juice to save the actual juicing process but I am not sure how much juice you get from a pomegranate to give an equivalent measure.

I really like couscous and this is one way I serve it. It is usually a side dish but sometimes I have it as my lunch.

    Recipe #282804

This sounds like a quick and easy way of experimenting with new flavors. I found the recipe in the Spring 2008 copy of BBC Easy Cook magazine. The recipe says that it is suitable for freezing.

    Recipe #294920

We had this for our main meal tonight. I rather heavily adapted it from the UK tv chef, Simon Rimmer's book 'Accidental Vegetarian'. I knocked out most of the fat he had in it (though it was all good fat) and changed around some ingredients to make it more low GI friendly. On top of being tasty this is pretty healthy. It is vegetarian, vegan, low fat, nearly saturated fat free and great for those of us with insulin issues because it is full of slow burning carbs with a low glycemic load. You could of course use normal spaghetti rather than the whole wheat kind but I use that just because it has a ton of fibre in it.

    Recipe #301361

This is more hummus inspired than actually hummus but yummy all the same. It is packed with veggie goodness and has a fresh garden type taste that goes great with the rustic (and seriously easy) baked garlic pita chips.

    Recipe #354080

This looks both super healthy and super tasty. I am always in the need of healthy recipes so when I saw it in a back issue of Olive magazine I decided to put it here for safe keeping.

    Recipe #367344

I am a spice wimp but my husband loves hot and spicy food. So, I am proving my love for him and putting this recipe in my collection to make for him..lol.

    Recipe #367394

I enjoy coming up with different types of oven fries to satisfy my craving for fries while still staying within the ranges of my low fat diet. This is my most recent creation. My husband went 'mmmm' when he tasted the first one. So, i am thinking it is worth posting and sharing :)

    Recipe #367434

These look yummy and spicy. I found them in a back issue of BBC Good Food magazine and placing it here for safe keeping.

    Recipe #367491

This is my favourite hummus recipe that I have developed as of late. The green olives work well to add a slightly salty note to the hummus. The way I make hummus uses less oil so I can feel less guilty about enjoying my favourite dish. Coriander is known in the States as cilantro. I came up with this recipe for my vegetarian food blog at wwww.weekendcarnivore.com .

    Recipe #423641

I am a hummus fiend and I like coming up for new versions. I had a jar of preserved lemons in my fridge and decided to give my latest hummus recipe an extra Middle Eastern feel. I originally made this recipe for my vegetarian food blog at weekendcarnivore.com .
