    SANDWICHES [tried and true]

I know, I know - sandwiches are so tired. Not anymore! These are the recipes I pack in my lunch for work. It's fun when my co-workers spend thier hard-earned $$$ in the diner, and then pick at it while they shoot envious glances towards my sandwiches!

This is the chicken salad I make when I want something simple and comforting. I like this on wheaty rolls, or on a bed of romaine lettuce.

I used to get this sandwich at a little family restaurant in Las Vegas. It is wonderful and oh so easy!

    Recipe #14727

This is a nice change from the standard chicken salad recipe. It's pretty spicy / tangy from the mustard and the spices. I like it on whole grain bread. [Loosely adapted from an episode of $40 A Day]

    Recipe #145075

I like this sandwich paired with a soup for lunch. Toasting the croissant and using mayo means this sandwich holds up well to being packed in a lunch.

This is the tuna salad my mom used to make. Simple, comforting, wonderful on soft white bread. The quantities are estimates, since Mom never really measured.

    Recipe #167881

This is a little more upscale take on the classic tuna salad recipe. It's fantastic as a tuna melt - spread on thick slices of bread, top with cheese, and broil until nice and gooey.

    Recipe #195752

This is a very simple, mild tuna salad. Prepping the onion as directed removes the raw onion bite. I like this on a bed of green salad. [Essentials of Classic Italian Cooking (Marcella Hazen)]

    Recipe #185343

This is nice change from the standard mayonnaise-based tuna salad recipe. I like it stuffed into pita pockets with some lettuce. [This is loosely adapted from an episode of 30 Minute Meals]
