I had this at The Davenport Cash store, which is north of Santa Cruz, CA. While everyone's dish was good, they all wanted bites of mine! Luckily it was easy to duplicate at home. I've used other breads, but I think a quality white sandwich bread best lets the flavor shine through. I've also baked several (at about 400 degrees, til golden browned) and then cut into quarters for appetizers at a brunch.
Originally called the Ploughman's Sandwich, I have changed this to a vegetarian sandwich by leaving out 5 oz. corned beef. Feel free to add it if you want to! The original recipe also called for Irish cheddar cheese to be soaked in Guinness beer for 2 hours. Hmmm. This is supposed to be one serving! I'm calling it two servings! The mayonnaise in place of the butter makes the bread toast evenly and gives a similar yet different crispiness. This is how they made it on the grill at a diner I used to frequent, the kind where the grill is behind the counter and you can watch. CAUTION: using low fat or no fat mayo or even miracle whip will change the outcome of the final product, the first 2 contain water and the second sugar that does not act in the same manor as an oil or fat sub.

Trust me you will be craving this often once you try it! --- you may use regular white salt but the seasoned salt is better, also use as much cheese and tomato slices as desired, I sometimes add in some chopped sweet yum yum pickles to the tuna filling too --- low-fat mayonnaise and cheese may be used :)
This is a great way to use up the last of your garden. Just Bite into this Crunchy roll with tender crisp tomatoes, eggplant, peppers, onions, and mushrooms that's well seasoned with garlic, rosemary, & basil and creamy cheese. The cheese can be omitted for the Vegetarian or those that are lactose intolerant.
Some recipes make you go HHMMM!?? Luckily I tried this and it made us go YUM! This isn't the normal combo you'd see on a sandwich, but very tasty! They are quick, easy, and lo cal. Another delight from Cooking Light.
As a pimiento cheese fan, I couldn't resist trying this sandwich from Southern Living magazine. It's definitely a keeper. The recipe originally called for light sour cream, mayo, and cheeses. If I'm going to splurge on pimiento cheese, it ain't a gonna be light!
These delicious sandwiches make a simple lunch special or a quick dinner seem not so rushed. Perfect for leftover holiday ham and turkey; or you can use deli sliced ham. This recipe was inspired by a beautiful cool spring evening and left over Easter ham. Our 4 year old loved his - I used a mayo and mustard combo for his. Goes well with a fresh garden salad, oven fries and a nice bottle of California White Bordeaux.
