    Entry for the Ready Set Cook #3 contest. This wrap makes a great take along lunch because there is no dressing to sog it up. The cumin Cream Cheese, sweetened with grated carrot is all the dressing needed. Wonderful crisp lunch!

    These are quick, healthy and delicious! I like to use a saltier, cheddar-type cheese to bring out the sweetness of the peppers and mango; add as much heat as you wish with the chile peppers (but I particularly like lots of chiles with mango!). Use complementary-flavored colored tortillas instead of plain old white if you like! Can be served as an appetizer, snack, lunch, or light dinner.

    Delicious recipe originally from the Sunset Crockery Cookbook. I made a few changes when I tried the dish. I used about 3 pounds of skinless chicken thighs instead of an entire chicken. Not having nutmeg, and liking extra heat, I sprinkled the chicken with ground red pepper instead. Also I didn't have pimentos or almonds.

    I originally got this recipe from WW. It's become such a staple around our house. I've added a few more veggies to it to make it a more complete meal. It's designed for a smaller crock pot, so if you have a large one, just double the recipe. Chicken can be thawed, partially thawed or even frozen; just adjust the cooking time.     This is so simple, it's almost a non-recipe, but so delicious I had to submit it. I came up with it one day when I wanted to do something different with a pork tenderloin. It was such a hit, it became a family favorite, replacing the pallid-by-comparison taco meat. It works just as well with boneless chicken or beef. It's very popular at potlucks and get-togethers, also. Pork weight is an estimate...I just use a good-sized roast. This is also a good recipe for OAMC, as you can cook and shred, then package the meat for later use.

    Delicious stuffed "twice-baked" potatoes... makes a nice side dish for many entrees, and the attractive presentation would be suitable for entertaining. Can be prepared in advance and frozen, and you can cut down on prep time by initially "baking" the potatoes in the microwave.
