    We love having Sandwich Night with chips one night a week for a almost-no-work meal! Most of these are hearty supper sandwiches with a few lighter type sandwiches included.

The longer they sit the more the flavors will blend and they will firm up more, allowing for easier cutting. Can't wait to try this recipe, it sounds awesome to me. You could easily substitute other crab meat for the lump crab if you desired.

    After tasting Coco Bakery and Deli's (in Washburn, Wisconsin -- can't give them too much praise) version have been on a hunt for making my own. Notice that I said MY OWN as hubby won't sample. All the more for me. Lol!! I make the filling then cut it up into 5 portions and freeze for me to eat later. Best chilled. Timing does not include thawing of spinach nor squeezing it dry. Hubby does like the feta cheese spread so I put that on his sandwich which is why I have two portions for that and it does not keep too long. Sandwich can be assembled earlier in day and then wrapped in plastic prior to serving. Realize this is confusing but posting so I can make for how I honestly use.

    I love Greek gyros sandwiches, but I don't like to eat lamb and it's not the healthiest food in the world. This recipe satisfies my craving. You can eat these on pita bread, but it's just as good on any other bread in place of deli meat. Serve it with tzatziki sauce, Greek yogurt, or sour cream.

    When I flipped my 2011 Betty Crocker calendar to May, I found a delicious looking photo and recipe for tacos that used baked beans, chicken, and bacon. Immediately I thought, "Why haven't we tried something like this?" It's right up our alley! I ended up making some changes, so this the variation we use, inspired by that drool-worthy photo in the calendar. Use your favorite homemade or canned baked beans! Omit the jalapeno if you want to keep it mild, or remove its seeds and ribs. We like a little zip.

    The mushrooms and tangy Dijon mustard make this a top notch sandwich! Creamy Fontina cheese is just right, but you can use Gruyere or omit the cheese altogether!
