    Originally called the Ploughman's Sandwich, I have changed this to a vegetarian sandwich by leaving out 5 oz. corned beef. Feel free to add it if you want to! The original recipe also called for Irish cheddar cheese to be soaked in Guinness beer for 2 hours. Hmmm. This is supposed to be one serving! I'm calling it two servings! Adapted from the Haas Avocado Board.

    You can smell the bacon from the outside the house. Fall is approaching and the wind has picked up a little bit, and a nice breeze is blowing from the south, which in turn transfers the aroma of fresh bacon right out the window and into your nose. Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.

    I love these - these are so easy and such great flavor. I get a nice loaf of fresh pumpernickel and cut thick slices. Add some very thin sliced red onion, grilled eggplant, crumbled goat cheese, fresh basil, garlic aioli and roasted red peppers. Just perfect! I like to press it down lightly as it grills simply brushed with a little oil on the grill and it is a perfect sandwich. Served with a salad, soup or fresh grilled fries.

Sandwiches come in many guises, from simple and elegant to hearty and robust; in my cookbook I aim to have them ALL in there! Sandwiches tick all the boxes for so many meals and events: the obvious high teatime table, cricket teas, picnics, packed lunches and quick snacks. These sandwiches are dainty and elegant and would be ideal for the teatime table. The use of fresh chives gives them a bit of a lift and you must try to use the salad cream as well as the mayonnaise; salad cream has a pronounced vinegary flavour which cuts through the richness of the mayonnaise and eggs.

    Read Dawnab's Grilled Cheese Diner Style recipe and was suprised to see the feedback on the mayo. Here is one we have been enjoying for years that uses mayo for butter. It really dresses up a breakfast, and can be cooked on a grill with a griddle when camping.
