You can smell the bacon from the outside the house. Fall is approaching and the wind has picked up a little bit, and a nice breeze is blowing from the south, which in turn transfers the aroma of fresh bacon right out the window and into your nose. Dennis was wondering what was going on, after all, it was the middle of a fall afternoon. The door creaks open, Dennis slips off his boots, hangs up his hat on the pegged hanger, and rushes into the kitchen. I turned around to greet him with a smile, and laughing at his questioning look, I tilt my head and say, "It's bacon Dennis!" "I know, I know...." tests Dennis with a small voice. Dennis loves bacon. He will eat a couple of pieces a day, that would be, if I let him. I decided I would at least bring some healthfulness to him, and something tasty at the same time. One piece of bacon, wrapped in a tortilla, (or pita for that matter) with an abundance of lettuce, tomato, and special spritely green onion with a spot of cheese dotted on the top would be the answer to his dream.

Cucumber sandwiches are made with fresh springy white or brown bread, lightly buttered, and with the crusts cut off – the perfect cool summer snack to go with your afternoon tea. This recipe idea came from a friend who was lucky enough to attend a Garden Party at Buckingham Palace - she swears this is how they made them! Cucumber sandwiches achieved literary notoriety in Oscar Wilde’s play The Importance of Being Earnest (1895) when Algernon devours an entire plate full in the first act and there are none left for his aunt, Lady Bracknell. They are presented by Jack as being a delicacy: “Hallo! Why all these cups? Why cucumber sandwiches? Why such reckless extravagance in one so young? Who is coming to tea?”

The news is out - scientists at my old university, (Leeds University in West Yorkshire) have discovered the PERFECT way to make a "Bacon Butty", that quintessential British sandwich, and they have devised a mathematical formula for it!! The bacon butty is one of my FAVOURITE sandwiches of all times.......especially when doused in HP Sauce or Worcestershire Sauce! Here is my method - it's hardly a recipe, more of an idea and an assembly job! I have posted their mathematical formula at the end of the recipe - my formula is: Eat your bacon butty whilst it’s still hot and crispy!! Please increase the quantities as needed. I like to use smoked bacon, but any good quality dry cure bacon will be fine.

Santa Rosalia is a small Mexican mining town located on the coast of the Sea of Cortez (Baja Side). Their claim to fame is a church built by Gustave Eiffel and their hot dogs! At dusk every night, a street cart parks across from the church and sets up for business. Their hot dogs are wrapped in bacon and served on a slightly sweet bun, with a 'sea' of condiments to choose from. They are, by far, the best hot dogs I've ever eaten! NOTE: So far I've not been successful in replicating their buns, but this recipe is still wonderful with a high quality store bought buns (such as Sara Lee Soft and Smooth Buns) or Recipe #318739 ! UPDATE: I've been making them on a griddle on the stove top and it works great.

These are delicious! the following ingredients are for 6 sandwiches. Make certain to use a firm bread like Italian, pumpernickle or rye, the regular soft sliced sandwich bread will not hold up well to this.
