Cucumber sandwiches are made with fresh springy white or brown bread, lightly buttered, and with the crusts cut off – the perfect cool summer snack to go with your afternoon tea. This recipe idea came from a friend who was lucky enough to attend a Garden Party at Buckingham Palace - she swears this is how they made them! Cucumber sandwiches achieved literary notoriety in Oscar Wilde’s play The Importance of Being Earnest (1895) when Algernon devours an entire plate full in the first act and there are none left for his aunt, Lady Bracknell. They are presented by Jack as being a delicacy: “Hallo! Why all these cups? Why cucumber sandwiches? Why such reckless extravagance in one so young? Who is coming to tea?”
My sister and I tried one similar to this in NYC and I fooled around with different variations before I came up with this. The measurements and times aren't exact because I threw this all together one day. Hope you enjoy!
This is one of my favorite sandwiches! I usually use a wonderful white horseradish cheddar cheese rather than provolone, but it's kind of hard to find and the provolone is tasty, too. :) I've tried it on a lot of different breads, but I think that Oroweat's Carb Counting Multigrain Bread (when I'm being good) and Poulsbo Bread (when I'm bad) are my favorites for this sandwich.
Read Dawnab's Grilled Cheese Diner Style recipe and was suprised to see the feedback on the mayo. Here is one we have been enjoying for years that uses mayo for butter. It really dresses up a breakfast, and can be cooked on a grill with a griddle when camping. We use different jams and jellies, and replace the cream cheese with peanut butter for the kids (and sometimes Grandpa).
"This sandwich is called a 'Media Noche' which translates to 'Midnight.' It is not exactly a "traditional" Cuban sandwich, for those of you fortunate to have had one, but this one makes a wonderful dinner sandwich because it is served hot. A nice side dish is black bean soup or black beans and rice, and plantain chips. COOKS NOTE: Bust out your Foreman Grill, or Panini Press!

This takes some of my favorite flavors, basil and lemon, marries them with grilled chicken and melting cheese on a hot grilled bun. yum. I will post the chicken recipe on its own as well (you can use scaloppine too, I prefer the thicker cut)
What I do is cook the chicken for dinner making extras and use the leftovers for the panini :)
This is from the Oprah-sponsored cookbook "In The Kitchen With Rosie." I love this sandwich!!! I leave out the fresh basil, arugula, and jalapenos just because I usually don't have them on hand. This is a spicy sandwich, so if you have a low tolerance for heat, I would leave out all the spices. However, I wouldn't be able to gurantee that it would taste as good!
