This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

    Recipe #9272

I've made this a lot of years,! LOL This is a sauce with several uses, at least in my house. I use this for enchiladas, for taco sauce, for simmering meats in, it's just a kind of all purpose sauce. It's my go-to Mexican sauce. You'll want to use the correct type of dried chile peppers; the large, dusky red mild ones. If you are unable to find them in your market, try a Mexican market. This recipe can get rather messy, but it's so worth it! It freezes well, so try doubling it. If you can't find dried ancho chiles, you may certainly use dried pasilla peppers, or a mixture of all three. If you cannot find Mexican oregano, regular will do.

This is a basic red chile sauce that can be made as hot or mild as you like by adjusting the chile powder. From Santa Fe Hot and Spicy Cookbook.

    Recipe #253132

Salsa de Chile Rojo. This is based on a recipe from Sunset's Mexican Cook Book. Sunset recommends mild dried chiles, ones that are large and dusky-red. Use as an enchilada sauce.

You can make this sauce easily at home. From Copykat.com (http://www.copykat.com)

Very simple recipe for Salsa. Quick and easy, I learned this from a lady I used to work with, and edited it to suit my tastes. Everyone that's tried it asks for the recipe. It's great with chips or on anything Mexican.

    Recipe #91410

We think it's that good! I think the roasted flavor of the sweet grape tomatoes makes the difference....this salsa has a very fresh, bright taste and I hope you enjoy it as well!

    Recipe #304529

I love this salsa for breakfast in Spicy Cilantro Scrambled Eggs or (for dinner) in Salmon in Luxurious Green Sesame Pipian. My housekeeper in Mexico gave me this recipe and I have used it ever since.

    Recipe #221053

This homemade salsa is comparable to some of the best I have had at Mexican/Tex-Mex restaurants and beats anything you can buy off the shelf. Of course this is one persons opinion. Try it for yourself.

    Recipe #126692

Our family is famous for this Salsa. My dad developed this recipe several years ago. Adjust the jalapeno to your liking.

    Recipe #317014

this takes a minute to make, but needs at least 6 hours of refrigeration time to blend the flavors, overnight is even better, add in some cayenne for heat or use canned tomatoes with jalapenos included :)

    Recipe #310128

Since I started making this, my family doesn't want to eat any other salsa. Every time I take this somewhere, someone asks for the recipe and because it tastes so fresh, they are always surprised that the recipe comes mostly from cans. This has stayed fresh in my fridge for as long as 2 weeks - which is the longest it has been in the fridge until it gets eaten! This salsa is excellent with MommyMakes Homemade Baked Chips (Recipe #124908) and Rita L's Frozen Margaritas (Recipe #58559).

'From Rick Bayless' cookbook Mexican Everyday. I love this because you can make this in the winter when fresh tomatoes aren't available. It's important to use high quality fire-roasted tomatoes - preferably organic. I like Muir Glen.

Pretty simple salsa, I'm told by the originator that it's authentic.

This is one of my summer favorites. I usually serve atop steamed chicken breasts with rice, but then we eat the rest of the salsa by itself!

Great recipe from Cooking Light! Very healthy, great with fish, chicken and on its own. Add avocados and/or onions for variety.
