In an effort to be frugal and never waste a crumb of food, peasants around the world have created ingenious dishes that utilize day-old bread. Hence the birth of bread pudding, bread soup, and even bread salads. Fattoush is a perfect example of the latter. It's name means 'moistened bread', and it's made of pita that is crisped in the oven and tossed with tomatoes, cucumbers, and an invigorating vinaigrette made of olive oil, lemon juice and mint. From the Take-Out Menu Cookbook.

    Good and hot.

    Recipe #10506

Excellent on tossed salad greens, over sliced tomatoes and as a dip for veggies.

    Recipe #16950

From www.TopSecretRecipes.com I found this on the Top Secrets Recipe site. I was desperately searching for a well flavored "oriental" dressing to make a Chinese chicken salad with. I found it! You can use light or nonfat mayonnaise with no problems.

    Recipe #47441

This is packed with flavor but little oil. Nice with a mixed green salad with jicama and avocado, adding chicken for a meal. Or good to dress a chicken and rice salad.

    Recipe #189782

This is a dressing originally used for Tuscan Panzanella. However, my Grandson (15) eats this as a sandwich...it is that good. I made this for my daughter's wedding and the only complaint from the guests was that it was not in jars for them to take home...LOL. This is also good as a veggie dip. Oh heck...just put it on anything!

I think this recipe came from one of the Moosewood collection. As usual I didn't write down the method, but have included my way of putting it together. Feel free to do the same!
