    In an effort to be frugal and never waste a crumb of food, peasants around the world have created ingenious dishes that utilize day-old bread. Hence the birth of bread pudding, bread soup, and even bread salads. Fattoush is a perfect example of the latter. It's name means 'moistened bread', and it's made of pita that is crisped in the oven and tossed with tomatoes, cucumbers, and an invigorating vinaigrette made of olive oil, lemon juice and mint.     From I found this on the Top Secrets Recipe site. I was desperately searching for a well flavored "oriental" dressing to make a Chinese chicken salad with. I found it! You can use light or nonfat mayonnaise with no problems.

    This is a dressing originally used for Tuscan Panzanella. However, my Grandson (15) eats this as a is that good. I made this for my daughter's wedding and the only complaint from the guests was that it was not in jars for them to take home...LOL. This is also good as a veggie dip. Oh heck...just put it on anything!
