This is my variation on all the bean salads out there. I found using salad oil and white vinegar to be too bland for my tastes, yet I didn't want a complicated salad full of herbs. This is my creation! This recipe is suitable for diabetics or low-carbers if you use the Splenda. There is no discernable taste difference between using Splenda or using sugar. I hope everyone who tries it enjoys it.
We keep this cold, low-fat, low calorie veggie in the refrigerator at all times during the hot Summer months. We eat it as a side dish or my favorite way - spooned on top of a green salad just before adding the dressing! NOTE: This is a versatile salad. Let your imagination run wild and create new versions from ingredients you have on hand!

My Mom got this recipe from a chef around 20 years ago, and we have been making it since. It's divine! Not a creamy dressing, rather more of a vinaigrette Caesar.

This is one of my mother's favorite recipes. It could be served with any type of meal, but we like to have it with pork and barbecue. The use of a food processor will make preparation easy in shredding the cabbage.
Whether you choose the elegant presentation or the family presentation this salad brings out the best in your summer-fresh, vine-ripened tomatoes (the pink rocks from the grocery store in winter just won't cut it). Use it as a side dish with something off the grill or cut into a slice of crusty, artisan bread and make it a cool, light, meal for hot weather. I'll confess -- I drink the juice from the bottom of the bowl ... if the kids don't beat me to it. ;) LOL
This is a warm marinated salad that I make often. It is so good! I often make a meal of just this salad by itself, and some good bread. I hope you will give it a try, you won't be disappointed It is colorful as well as tasty and travels well too because of no mayo. It is best served warm or room temperature.
