This makes a refreshing meal, served with a loaf of crusty french bread and good bottle of red wine; could also be used as a first course, in reduced quantities. I recommend using the finger-tip sized fresh mozzarella balls if you can find them. Which salad greens you use are up to you, but a combination half dark green leaf/half alfalfa sprouts seems to work particularly well, and is also quite attractive. I'd never eaten alfalfa sprouts before trying this recipe but was a quick convert to their clean, spicy flavor.
We usually ate it for lunch on a Friday so that we wouldn't be too stuffed for the Shabbat meal. It's light and tasty especially with rye bread. Agreed, you have to like beetroots to enjoy the salad (and I do). Prep. time does not include chilling
I found this recipe in Southern Living, haven't tried it yet. The original called for A LOT more (full fat) sour cream and mayonnaise, I've posted it with changes I would make. I hope it's good! I love dill!!
One of the great pleasures of summer is the abundance of fresh vegetables. I had some leftover grilled corn and a few other fresh ingredients lying around, so I made this salad. I prefer the simple sweetness of the fresh vegetables in here, and raw onions don't sit well with my husband, but I bet a little onion and garlic would be great in this salad, so I added them as optional ingredients. I bet this would also be good topped with a little crumbled bacon or feta cheese.
Summer in a side dish! This is a Dave Lieberman recipe that I adore. You can serve this any time of the year, but I think it's best during the summer. If you're looking for a delicious and different potato salad, this is it!

A fun way to get kids eating a whole bunch of vegetables, without much cleaning up! I learned this recipe while I was eating mostly raw, but I wouldn't recommend this for children, so add in some of the optional extras.
