If salads weren't so much work, I'd have them more often — that's often what I order at restaurants. I love salads, I just don't like all the washing, cutting, chopping, etc. to make them happen. I know, I'm so lazy!! I do love a good salad and I have my favourites. Here's some I've found, some I've tried, and many that I PLAN on trying.
This is a great alternative to the traditional taco salad. It truly is a whole meal salad; just add hot, crusty rolls and maybe some white wine and a light desssert for a great luncheon or supper. It goes together quickly, just be sure to have the ingredients chilled. This recipe was given to me by a Hispanic teacher at our school so I tend to think of it as "authentic".
I found this is the May 2005 issue of Shape magazine. I made it for supper last night and it was great! My 10-year-old had three helpings, but my other kids weren't big fans of it. It's definitely a grown-up dish. Just a note, I doubled the amount of avacado and used imitation crab meat.
I had never heard of this dish before tasting it last summer at my fiancee's house. Then, everywhere I went it began to pop up. Its simple, down-to-earth charm depends upon the freshness of the ingredients- I can't wait for tomato season to return!
