If salads weren't so much work, I'd have them more often — that's often what I order at restaurants. I love salads, I just don't like all the washing, cutting, chopping, etc. to make them happen. I know, I'm so lazy!! I do love a good salad and I have my favourites. Here's some I've found, some I've tried, and many that I PLAN on trying.
This is a fun alternative to traditional coleslaw, with a great sweet&sour flavor. I got this from my mom, who got it from her aunt. This is requested by friends everytime I go to potlucks, and is so fast and easy to make. :)

I found this recipe in Family Fun magazine as a recommendation for Pot Luck recipes, and modified it to what you see here based on what was in my grocery store. Satisfied my Chinese food craving, and crowd pleaser for my (picky) family. The colors make it look like a Mardi Gras parade- enjoy!
This healthy salad has lots of taste and eye appeal. Add more or less jalapenos to suit your own heat preference. Most people like it this way and I serve some hot sauce on the side for the heat lovers.
