Another yummy recipe I got from my sister, Jeannine. (See also "Sister's Vegetable Casserole"). This is easy to make and very good on a hot summer's day! The prep time is so long only because of the cooling and chilling periods.

I subscribed to Lynne Rossetto Kasper’s “The Splendid Table” newsletters some time ago, and this is one of many fantastic recipes she has included in her newsletter. The recipes and her tips - which I have included in this posting - are great. I have posted this recipe here exactly as I received it. Because "The Splendid Table” recipes and Lynne’s tips are always SO excellent, I shall post some more of them. I love this recipe, Lynne clearly loves this recipe; I hope that other chickpea lovers will too!
This is so fun to make together with your kids, and always gets oohs and aahs from children and grownups alike. I remember my mother making a version of this when I was young, so it brings back fond memories to serve it now. For an Easter potluck, I used these as an adjunct to Tom Lambie's Cherry Fluff Salad, Recipezaar #10088, by placing the bunnies on lettuce leaves around the edge of a large tray, with a large bowl of the fluff in the center. Quite a nice response from the group as a result.
This is like my Dad's fruit salad only with vegetables. My brother and I loved the fruit salad so much that we also ate our vegetables cause Dad said it was the same. It's not, but just as good! I added the orange pepper.
