This version of the famous Indian Chaat (pronounce with the emphasis on the "aa", as in "aarmy") doesn't really do justice to it, but it sure is yummy anyway! (Chaat is a type of salad famous in the roadside food stalls in North India, particularly in Delhi, the capital of India) Mom concocted this recipe to stop me from eating junk in the evenings, and boy, it worked! This tastes very different if you use chaat masala (a spice blend), than if you don't, so if you like Indian food, do yourself a favour and buy some chaat masala! :) Note: Cook time does not include time for boiling the potatoes... use leftovers!

I created this recipe because I tasted an artichoke and bacon pasta salad I liked and thought that the same concept would be good as a potato salad. This can be made more healthy by using fat-free mayo and turkey bacon.

This colorful asparagus and radish salad is dressed with a sesame-soy vinaigrette; pair it with grilled shrimp and rice noodles. Sounds yummy to me. . .found in Eating Well and placed here for safe keeing. They say this vegetarian salad is low calorie, low fat, low sodium and heart healthy.

This salad is a refreshing change from the usual bed of lettuce! Cook time is blanching of asparagus.

    Recipe #31745

Such a simple blend of a few ingredients makes such a wonderful side dish! It is especially great with grilled food is excellent as a filling in pita pockets with chicken or lamb. You can substitute your favorite herbs like fresh basil or oregano for the cilantro but there is something about the cilantro that just makes this dish perfect! If you like cilantro I suggest you try it first before experimenting with other herbs.

From trade group Avocados from Mexico. This is SO very good if you're an avocado lover like me. Use the darker, bumpy skinned avocados.

A unique version of a potato salad without any mayo. Good for cookouts and potlucks. I think the friend who gave this to me said it came from Paula Deen.

Warming the vinaigrette makes this salad special and really brings out the aroma of the fresh basil. It's from Martha Stewart's Quick Cook. I think that adding some grilled shrimp or chicken to this recipe would make a wonderful luncheon dish.

I love this! I found it in Martha Stewart Living April 2002.
