This makes a great meatless meal, a lovely luncheon or dinner salad when topped with a grilled & sliced chicken breast.
I tend to like a tangier dressing so I use less oil than vinegar. Feel free to adjust to your taste. The amount of added veggies, fruits & nuts can be increased as well. I recently discovered that by adding sugar snap peas & seedless cucumbers it has a more "Asian" flair to it. Enjoy!
This can be made a day ahead and tossed with the dressing before serving.
Prep time does not included grilling chicken breast or shrimp.
If serving as a side salad, this will serve up 8-10+.
This is an easy delicious side dish that can be made for a picnic, barbecue, lunch, or supper. My sister brought it to a get together at my house and I've been making it ever since. It is now a favorite throughout our family and I'm sure you will enjoy it too!
This is the most delicious coleslaw that you will ever have! I make this for weddings, large socials and in the summer for BBQ's and parties, and there is never anything left it all goes and everyone wants the recipe --- plan ahead the coleslaw needs to be refrigerated for the stated time to blend the flavors, this coleslaw will intensify in flavor with chilling time --- this is not a thick heavy dressing like some other coleslaw recipes it's the perfect texture and flavor and what makes this coleslaw stand out from all others is the fresh lemon juice so please use only fresh I have used bottled in the past and it is just not the same --- the dressing amount will yield enough for two 16-ounce packages prepared coleslaw mix or 1 head of green cabbage --- for one 16-ounce package prepared coleslaw mix use the dressing amounts posted on bottom of recipe and add in 3 or more large of chopped green onions. This is my family's favorite pasta salad, and I'm always asked to make it for our holiday cookouts. All of the ingredient amounts are to taste, so feel free to add or subtract as desired. Prep time is time to boil pasta and chop all the ingredients, although a dicer/chopper significantly shortens the time. Also, we've found that preparing the night before enhances the flavor. Enjoy!
Zip lock has come out with these great little steamer bags. I'm going to down load several of the recipes for safe keeping. The idea is that steamed vegetables and meat are supposed to be better for you, because there is very little added fat.
I suppose you could also make this in a traditional steamer, however, the cook times may vary.
This macaroni salad is garden-fresh tasting with its unique blend of shredded carrots, cucumbers, and radishes. The buttermilk dressing has a garlicky dill flavor. This was clipped out of Ladie's Home Journal magazine about 20 years ago.
Asian inspired salad that EVERYONE asks me to bring, make or share. I actually had my voice on TV and won a $320 wok for this recipe! I have updated and modified it to be healthier and easier! Hope you like it! Submitted for World Tour Asian and SW catagories as it is very popular here in TX. NOTE: We never liked the 'leftover' salad as the crunchy parts got soggy except for the almonds until I got the bright idea to add the leftover salad to a tortilla and make it into a wrap. (I amaze myself sometimes! lol)
I placed the tortilla/wrapper in a skillet and flipped after the first side was warmed. Laid some sliced sandwich meat -whatever you like- on the warmed side and let the new side warm. Remove from pan and add leftover salad- drain any dressing from it to get it a little drier. Roll up and serve- WOW! Try adding other stuff to it as well. We liked raisins, dried cranberries, shredded carrots, chopped celery etc...

A quick and healthy tuna salad with a different twist. I put this together for lunch today, just tossing together what sounded good. The flavors came together nicely, I thought, so I am posting the recipe. It was great served in a whole-wheat tortilla.
