    Based on a salad I always order at one of my favorite Italian restaurants. I also call this a no-dressing salad because all they do is toss it with olive oil, so I ask them to leave it off (lower fat). It really doesn't need any dressing, but you can add lemon juice (as per instructions below), oil or use a dressing of your choice. To save time you needn't roast the artichoke hearts, but I strongly recommend it (you'll love the outcome). The optional toppings are my own suggestions. I made the salad with them at home. BF loved it. The restaurant, Gigino's, was voted one of the most "romantic" restaurants in NYC. It has beautiful views of the Statue of Liberty. This is a pretty fancy salad, so if you are making this for company you can do everything ahead up 'til peeling and chopping avocado.

    I love when I get a salad at a restaurant that is garnished with Hearts of Palm. I often see the cans in the grocery store and am tempted to grab one, but never do for fear that I wont use it. This is a typical salad, side dish or appetizer from Central America that uses this wonderful ingredient. Since the absorbency of the hearts of palm varies from batch to batch you may need more or less of the olive oil. If making as a salad spoon on top a bed of mixed greens.

    I love hearts of palm and I loved this quick and easy recipe that I found in the Chicago Tribune. The great thing about hearts of palm is they have zero fat and cholesterol, they're low in sodium and rich in iron, phosphorous and potassium! Using light mayo keeps this salad lower in calories and fat.

    This salad was a regular feature in my childhood, and still appears on the cold table at formal events. It is made of foods that would have been available at any Central/Eastern/Northern European farmstead. Every ingredient, other than the sour cream and salt, is optional. If you omit the beets, it is called a Balta (White) Misraine. Prep time is estimated, and I have not included the time to cook the veggies.

    I don't know who Susie is, but my mom has made this salad for years and it is my absolute favorite! Everyone requests this dish whenever we go to barbecues! Don't add the dressing until right before serving or the salad will become soggy. I have made this with lower-fat versions of the dressing ingredients with good results, so feel free to lighten it up.
