This is a wonderfully colorful and flavorful salad. It was given to me by my friend Mary. If you leave out the chicken it can be a side dish. It can be served as directed, or over a bed of lettuce.

    Recipe #68318

The first time I made this, it was based on what I had that needed using. Now, I buy ingredients specifically to make this salad. Cooking time = chilling time

    Recipe #163410

    Recipe #247875

The Mardi Gras colors are purple, green and gold. This is from the February 2005 issue of Vegetarian times.

    Recipe #248313

This is from Vegetarian Times. Very pretty!

    Recipe #248364

I can't believe anything this healthy can taste so good! Truly, this is one of the best things I've ever eaten. This recipe is very liberally adapted from one shown on Australia's version of Good Chef Bad Chef. The original poached a whole chicken, but I just bought a cooked chicken from the shop and 'cheated' with the poaching. It was still deeee-licious!

    Recipe #251296

A pretty salad adapted from Woman's Day magazine, perfect for brunch!

    Recipe #155542

From Cooking Light. Note marination time.

    Recipe #227136

It sounds weird, but it's a great crunchy alternative to other cold picnic salads.

    Recipe #114827

This came from one of my new cookbooks with recipes from around the United States. This one happened to be from New Mexico, which I thought was ironic because it's got Santa Fe in the title. Upon reading the description, the contributer owned a restaurant in Texas and upon retirement moved to New Mexico. This was claimed to be an exclusive and very popular salad. Passive time is chill time.

    Recipe #161040

A South Beach Diet cookbook recipe, this can be used for phase 1 or 2.

    Recipe #135331

Light, cool side dish for summer meals. Makes good use of your garden tomatoes and zucchini.

    Recipe #133365

My recipe featured in Southern Living. My friend's husband invented this version.

    Recipe #91430

Serve this salad with "recipe#186993". This originally came from Food Network ... Ila has spiced it up a bit!

    Recipe #216816

Great on a bed of lettuce or wrapped in a tortilla. Best if allowed to chill for awhile before serving.

Found on a bunch of fresh organic asparagus from where else but California! I made a few changes and added some other things to the original recipe. The Thousand Island dressing was found off the website apinchof.com.

Very easy to make once ingredients are assembled. This recipe is is great for pot lucks picnics, informal dinner parties, and other get togethers. A very delicious pasta salad that has many "pastabilities".
