I got this recipe from a coworker at the salon I work at. I didn't think it would be so wonderful and addictive! It's very creamy and sweet, and a great mix of flavors. It will be the best thing you ever use grapes for (except maybe wine!).
This is the most delicious salad - fresh and wonderful-tasting. FYI, lettuce can very much be a part of any greek salad - if you want it to. We like lettuce in my family and I often add it. It would not be 'authentic' in a Horiatiki (village) salad, but who cares?
This is my own macaroni salad. I did not get it from my mother or my grandmother and I did not get it out of a book or off the internet. It is not Amish, Cajun, Mexican or any other description of the various macaroni salads that are posted on the internet. It is my own made up salad. It is designed after my own recipe #20155 that I have posted on Recipezaar (with 121 high reviews, thank you very much to those that have tried it). The dressing is mostly the same, but there are a few other ingredients in this salad that is not in my potato salad. I hope some of you will enjoy it as much as you did the other.

This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!
This is an easy and delicious recipe to make when you have an overload of garden-fresh cucumbers, I use cherry tomatoes sliced in half since I have an abundance of them from my garden, and I use wine vinegar for this but regular white vinegar will do just fine! You might prefer a sweeter dressing so adjust the sugar and vinegar to taste. I have even added in some small broccoli and/or cauliflower florets to this.
This recipe is an adaption of one that I found awhile back. It has quickly become one of DH's favorites. It can be made several hours in advance and kept in the refrigerator. Please note that the cooking time is the minimum recommended time to chill the salad before serving.

If you've never tasted toasted pine nuts before, then this recipe will make you a fan! (They can easily be found in any bulk food store). This is the recipe that also started my love affair with balsamic vinegar, all the different flavors blend marvelously well in this awesome salad!

Recipe adapted from Mariel Hemingway." I first prepared it at the urging of Shelly, and wasn't sorry. My original review stated, "This is a very mustardy dressing. I followed Shelly's suggestion of reducing the mustard and adding more to taste as I blended the dressing. I used a dijon dressing and black olives, as this is what I had on hand. I also cut back the recipe to yield only enough for a couple of salads. I knew that my hubby wouldn't be interested, and wanted to make only enough for me to use in a day or so. The flavors are bright and fresh and really add to simple tossed salads. I like the fact that I am gaining the nutrition of the spinach in this dressing." This has become one of my favorite dressings.
