It just takes a few minutes to make wonderful, homemade noodles. All you need is flour, egg and a pinch of salt 2 tablespoons of milk. What a tasty addition to fresh chicken soup! My grand kids love these noodles in chicken broth with shredded chicken. If you are in a hurry you can drop little chunks of the mix into boiling broth instead of rolling, cutting, and letting dry. They are more like dumplings than noodles this way. (They must be VERY small chunks because if they aren't dried first they puff up...)

These croutons originally were part of a minestrone soup recipe. The soup was nothing to write home about and not a keeper but the croutons were to die for! I've doubled and quadrupled this recipe because my kids can eat these as if they were potato chips. It is truly scrumptious especially over a "good" soup or salad. This is a great way to use up stale bread.

This dressing was served at a restaurant in Belfort, France, a century ago, while my MIL's aunt "Tatschie" was visiting an uncle who lived in Luzern, Switzerland. After convincing the chef that they were Americans and the recipe would not go to the competition, she brought it back, and it has become a family classic, essential for family gatherings. Color will vary from orange to creamy-white depending on use of whisk, mixer, or blender, but the sweet, tangy flavor remains the same. Also good on sliced turkey or roast beef. (Kate Cowick was a neighbor in Kansas City, MO, in the 1930's, who loved and published the recipe, not the actual traveller as originally reported here.)

I created this Caesar Dressing several years ago when I was catering. People loved it and I just give it out. I tried to make it with low fat mayo but it was not the same. This recipe makes about one quart. I have yet to find a any Caesar Dressing in any restaurant that can beat this one. I have also added artichoke hearts or grilled chicken breasts. I will add my Chicken Adobe recipe that is great with this salad.

I was having company for dinner one bitterly cold day (-40 something with the windchill). I wanted a warming soup to start our meal and this is what I came up with. I used the slowcooker, but you could easily do it in a pot on the stove. I had cooked up a package of small white beans, so had homemade beans to use in the soup. Canned ones would work just as well. The vegetable amounts do not have to be exact. Add other veg as desired, some sliced baby zuchinni added near the end would be good. If you use rice or barley instead of pasta add at the last 45 minutes of cooking time. This is nice served with my Best Ever Focaccia, Recipe #446668. Garnish the soup with a ltitle chopped flat leaf Italian parsley if you have some on hand. This makes enough for 4 people as a main course, or about 8 as a starter. .

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored. Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad.
