This macaroni salad is garden-fresh tasting with its unique blend of shredded carrots, cucumbers, and radishes. The buttermilk dressing has a garlicky dill flavor. This was clipped out of Ladie's Home Journal magazine about 20 years ago.
I was once fortunate enough to go on a trek in Indonesia, where the guide provided us lunch which consisted of local fruits and vegetables. He showed us a simple technique using the avocado which was to halve it, slice it within its skin and then add salt and lemon juice. Since then, I have always insisted my avocado is prepared in this same way as it really brings out the flavour in a spectacular way.
Every time I eat at CPK, I have to have this salad! I love the tangy dressing, the fresh basil, the crispness of the ingredients. My husband got their cookbook for Christmas one year and I enjoy making it at home occasionally too!
This is a recipe for a cold rice/chicken salad with a curry twist, using Rice-a-Roni. My sister-in-law makes this for potlucks, baby showers, family get-togethers. It is always a favorite dish. I have made it as well and love the curry taste in it....and I'm not a huge curry fan! This recipe will serve 6 if it's used as a main dish or 8 for side servings. If you make it for a crowd, just double the recipe.
This is a great meal by itself, but if you must, it's also an excellent side for bbq's or get togethers. We can't keep it around for more than a day when we make it...delicious!!! Also...I like the veggies cut up fairly large in this salad...it just seems to work better that way.
