My husband Russ has been making this lately when we have odd veg in the fridge. I think he's almost got it right as his one was great. We actually planned to make coleslaw, but the weather turned cold and we had to re-think dinner. This was great with roast chicken. The last time he made this, he used leek instead of onion. Feel free to vary the veg.
We are currently travelling around Australia, following the crab season it seems. One of our favourite ways to eat all these crabs we catch is in crab cakes. Russell has almost perfected them for our tastes-but I tell him he'll just need to practice a bit more ;-)
If you like a ploughman's lunch, you might like these. Russ made them for our lunch today and I want to make them again! My Jaffle maker is electric and toasts two sandwiches at once. In Aus, we can also get long handled jaffle makers use over a camp fire. You could also make this in a panini press.
