    Easy tasty casserole just right for lunch or dinner. Serve with a green salad and perhaps some refried beans. If you wish you may skip the center layer of tortillas and only use 6 tortillas (personally I like the center layer). If you skip the center layer still put in half of the cheese after you have poured in half of the chicken mixture.

    Sometimes I just luck out and come up with a winner in my house the very first time...this was one of those times and my family has decided this should become my new BBQ sauce/marinade of choice! Thank goodness I wrote down the ingredients as I went!!! Prep time includes marinating for up to 24 hours. This freezes well and will do up to three pounds of beef ribs, so feel free to make plenty up for those cookouts this summer. It should also keep for 2 or 3 days refrigerated (remember there are no additives or preservatives).

    This quick and easy recipe was my winning entry in RSC #5. This dish is colorful and a southwest spin on pizza. It is very spicy with the chipotles and the jalapeño cheese. I served it with a green salad and simple dessert. Update: Since several reviewers were having trouble with the crust, I tried this again & agree that two cans of crescent rolls would be an improvement in order to not stretch the dough so thin. I have also made this on a pizza crust & into quesadillas and liked those options too. I hope you enjoy my spicy creation!

    OK, the name's silly, but this version of pesto is really good! The recipe makes enough to generously sauce 1 lb of your favourite pasta. Developed for RSC #6. (edited to add that this recipe eventually won Ready, Set, Cook! #6. I am so proud of this creation and all the favourable reviews it has received - thanks to all who have tried it.)

    Who does not like Scampi. You have had Scampi the usual method, with loads of garlic and extra virgin olive oil... Now have Scampi my Med-way, and you won't go back.... Have plenty of baguette to soak up all the sauce... So good, you will be sorry when it is all gone. Winning Recipe Entry, RSC#7.

    This IS a WONDERFUL SOUP. And look at the list, just a few ingredients! I came up with lots of GREAT ideas for the contest, but when I asked my friends what they liked best, they always mentioned this humble soup! How funny is that? The rum really makes a difference. It is added at the very end, so if you have kids at the table and you're worried about it, just serve them first and add the rum later. You may want to leave it out altogether, but just let me tell you one more time that the RUM IS a LOVELY ADDITION. I use Patak's curry paste which is available in Asian stores where I live. Madras is labelled as a hot paste and Korma as mild. I've also tried a Patak's paste called HOT/TRES EPICE which I do NOT RECOMMEND.

    This recipe went over big-time with guests that do not enjoy fish! The very finely minced red onions lend a slight crunch and the capers explode with each bite adding a salty balance to the sweet herby mustard sauce that covers the delicate fish. This recipe uses fresh dill. Quick enough for a weekday meal but delicious enough to serve company. Pair it with steamed vegetables or homemade coleslaw and a baked potato for a complete meal.     First Place Winner in RSC#12! Super rich peanut butter dark chocolate brownies with a thick peanut butter topping accented with chocolate drizzle! Serving size will vary on tolerance for rich, sweet foods - the first time I made these, I cut into 20 bars and some of my guests thought that half the size would have been enough... I, on the other hand, had two!

    This recipe won 1st place in the RSC Lucky #13 contest. This quiche is more like a meat and vegetable pie with a cheese/egg custard holding it together. Because the chicken, onions and mushrooms are sauted to the point of carmelization the resulting flavors create a really tasty quiche. I hope you try it and that your family enjoys it as much as we did. This was so good the first time that I didn't make any changes and only needed to make it once, since no adjustments we necessary. My granddaughter who had never eaten any kind of quiche and was reluctant to try it, said after the first few bites, "OOOh, This is really good, I like this!" I hope you like it as well. This can easily be a main dish for dinner or for lunch. It is so full of meat and veggies that it is a meal in itself.
