    This takes a traditional full English breakfast and gives it a healthier twist! Thanks to chef Jamie Oliver, you can get a full Monty in under 500 calories. It's actually a lot healthier than most pastries, muffins and croissants. Give it a go! *I have to admit that I used regular bacon instead of the Canadian bacon. Personal preference. It's up to you!

    A yummy recipe from Beyond Parsley cookbook. This makes 2 strudel rolls. If you're not familiar with phyllo dough. It can be delicate. I unroll the phyllo sheets and keep them covered with a slightly damp, clean kitchen towel - taking out 1 sheet at a time to work with. This keeps your phyllo from drying out. Use a pastry brush to spread the melted butter on the phyllo sheets.

    This empanada recipes offers a good combination of flavors and textures. The secret is the cheese in the middel of each empanada. When the empanadas are cooking, the cheese melts and adds a nice creaminess. Empanada dough disks can be found in the frozen section of some grocery stores or in Latin markets.     This is a healthy recipe from Ellie Krieger. I like to use these as a "to-go" dinner option for those busy weeknights. Good for lunches, though, too! I usually use a store-bought rotisserie chicken, instead of the 4 cooked chicken breasts, to make this recipe super fast and easy. I sometimes use regular romaine lettuce if I dont' have napa cabbage leaves. This is a very flexible recipe.

    Here is a Southwestern inspired dish from Tyler Florence. Bacon-wrapped shrimp is a delicious combination as it is, but pairing it with the salsa and vinaigrette puts this recipe over-the-top! This shrimp recipe also works well on the grill. Serving it with margaritas and/or beer wouldn't be a bad idea! Note: You can make the salsa and vinaigrette ahead of time and keep refrigerated. You could also prep the shrimp and wrap with bacon ahead of time. That way, it will be a breeze when it comes time for dinner.

    This authentic recipe was given to me by a Greek co-worker. This is a delicious, sweet, finger-licking Greek dessert. When you are working with phyllo dough, keep a slightly damp towel over your phyllo sheets so they don't dry out. When peeling off a phyllo sheet from the stack, do so by one end and pull away slowly to avoid tears. Small tears won't matter too much in this recipe. However, if you completely rip up a phyllo sheet just discard it and try again!

Recipe from Eva Longoria. *Cooking time is really refrigeration time. Notes: Personally, I wouldn't let the strawberries marinate any longer than the 20 minutes or they will be too strongly flavored. The whipped cream really balances the flavors!

    Leeks as a side dish. Who knew? These leeks benefit from the slow cooking to bring out their natural sugars. Don't cook them too fast or over heat them so they'll burn.
