    Rice Is So Nice!

I love rice! Just plain with butter and salt, with a splash of soy sauce, with seasonings, with meat mixed in....it's all good. Here, then, are some rice recipes I've come across and tried or that sound like I want to try them.

I love risotto! The vegetarian broth is vital to give it flavour - I use a broth concentrate and use twice the amount for risotto. The colour is equally important so consider a mix of red/green/yellow/orange peppers. Make sure your risotto is a little bit 'wet' in the end, so the dish doesn't get dried out and pasty.

My Aunt Helen used to make this to accompany her Sunday Rib Roasts or a thick and juicy London Broil. Aunt Helen passed away twenty years ago but her Rice Pilaf recipe remains a favorite of ours. It's very simple to prepare, no frills, but very tasty.

This is like the Rice A Roni in the grocery store except that it isn't as salty. It is better for you too. You can use this as a side dish or a main dish. It is optional to also wrap it in a flour tortilla with some cheese and make a burrito out of it.

    Recipe #321709

I started doing this to save some time in the evenings. I don't like using that 10 minute Uncle Ben's but I do like having my rice ready that fast ;O). I really like using sushi rice! Use whatever rice you prefer!

    Recipe #159839

Adapted from "Company's Coming: Make Ahead Meals" by J. Pare. Prep time includes time for rice to soak.

    Recipe #120553

Easy side dish. I often add a clove of chopped garlic with the onion and rice and 3/4 cup frozen peas near the end of cooking time.

Uses 2 cups of cooked white rice. It's from Traditions by the Oak Knoll School of the Holy Child, submitted by Theresa Patterson. If you double this recipe, double the cooking time too. I haven't made this yet but it sounds like a quick and easy recipe that kids would like too.

Taking what I know about rice pilaf, that it can be pretty blan sometimes, I came up with a great TASTY way to make rice. My family requests this all the time. Great served with Chicken, Pork and Steak. For those of you that don't want all the vegetables in your rice, try this one!

    Recipe #223199

Once you do the prep, divide into 3 airtight containers, for here it is only 20 mins to the table whenever you need it. I have three seasoned rice mix recipes see which one you like best. Look for the other two Onion Flavored and Curry Flavored Rice Mix.

A nice side dish for poultry. I made a change in the rice/broth ratio, and cooking method on recommendation of some of the reviewers, and after trying it myself again. This changed the servings to 4 instead of 2. Thanks to all reviewers for your input!

    Recipe #203770

The Benihana fried rice recipe. It used to be posted on their website.

    Recipe #141457

This recipe is so easy yet so good! It has a secret ingredient which you'd swear was sausage, it is so addicting and warmed up the next day--- watch out! It is great for potlucks, keeps warm well.

    Recipe #168718

This rice is absolutely amazing! If you love lemon and rice then you should not pass this up, this rice has all the creaminess of risotto without all the constant stirring. To insure creaminess use only aborio rice for this. If you are not a garlic lover then leave it out.

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

    Recipe #38748

This is an old stand by for me, its quick and easy and can be served as a main dish or side dish. Its great with a nice middle eastern salad and a side of yoghurt and also goes well with baked lamb or roasts. This is a great potluck dish as well.Seasoning are approximate, you can adjust to suit your tastes.

This is the best wild rice casserole I've ever tasted! I could make a meal of this alone!

    Recipe #35524

Risotto Cakes made in a mini-muffin pan. A great way to use leftover risotto to make lunchbox snacks. This is one of those basic recipe ideas that you can easily adapt to use up whatever odds and ends of ingredients you have on hand. And it's a recipe that can easily be doubled. I've not frozen these, but I've always found rice dishes freeze well, so I'm sure you'll find you can also freeze them.
