My husband LOVES rice pudding. I like using my appliances for everything, and have taken to modifying everything I can for the appliances that do all the work. here is a really good one. My DH tends to like alot of texture in his stuff. you can leave out the apples and raisins if you prefer and it turns out just as great. NOTE: when you look in there, it may look like it is over cooking. it is an illusion. Just stir it up.
Authentic Puerto Rican rice - great side dish, or serve with recipe #220415 and have as a main dish. When I serve it this way, I double the beans and top with shredded lettuce, tomato and avocado. Make certain to use only pearl barley for this. This can also be made on top of the stove. The mixture will thicken even more upon standing or refrigeration. My family loves this dish, it's a nice change from rice, hope you enjoy also! Add in the saffron, it really makes a difference in taste!
I made this up last night from things I had in the pantry. It's very thick and filling. I used the spices that I like, feel free to use what you think tastes good. Use vegetable broth or water to make it vegetarian.
OK- I know, it's not really a risotto if it's made in the rice cooker... I DON'T CARE. It still tastes good! (This recipe uses US measurements as I now have a US cup!) No oil in this one, the only fat is from the salmon and the cheese. Good way to use up a small piece of salmon. This is very filling but still makes 4 decent servings!
So I got a rice cooker. So of course I went in search of recipes for it...This was one that I found that looked really good. I've changed it slightly to a full meal in one. My cooked takes 90 mins for brown rice... if yours takes a different time adjust accordingly.

This is from a wonderful book, The Ultimate Rice Cooker Cookbook, by Hensperger and Kaufmann. It makes a wonderful, creamy oatmeal with no watching or muss or fuss. Definitely use steel-cut oats, which have a wonderful texture, so superior to the regular stuff. I usually use dried cranberries, raisins or currants, instead of the dates.
