ZWT 6. An Indian recipe by Revathy Kumar. We tried this and liked it very much. We had it with barbecued chicken that was seasoned simply with onion paste mixed with smoked paprika, salt and pepper, and a cucumber salad.
Excellent fragrant dish. Beautiful with my prawn and mussel curry.
I've only ever made it with the white meat from a freshly cooked crab, but it might be OK with tinned white meat.
Garnish with sliced cucumber and lime slices to serve, if desired.
This is delicious when you want a nutty, garlicky rice side dish. It complements chicken, pork, and fish very nicely and is traditionally served with a sprinkling of hot sauce. If you can find authentic molho apimentado (hot sauce madde with bird chiles), all the better!

I have tried many recipes trying to duplicate the dry Mexican rice you get at the restaurant. After a lot of tweaking this hits the mark. My hubby loved it and said this is the real deal. Hope you enjoy it!
