    Italian flavors blend in a creamy, satisfying soup that has potatoes, italian sausage, and kale. I like a kick, so I use spicy sausage and add crushed red pepper flakes.     This was an experiment that turned into a pleasant surprise. I started with a recipe from the Zuni Cafe Cookbook and added a few ingredients for taste and color and increased the quantity for my hungry family. It requires some chopping but comes together rather quickly and is very tasty! (Made in the Midwest with Michigan Asparagus:)

    I got the original recipe from Cooking Club of America. I changed the amounts due to my personal tastes as you may do. It doesn't HAVE to be refrigerated overnight, the only time I do that is just for my convienience. Amounts on salad ingredients may be adjusted or left out according to what you like.     I found this on the TOH site and it has quickly become a favorite of my family's. Add a salad and a warm loaf of sourdough and it's perfect comfort food! I generally make the roux and then throw everything in my crockpot to simmer for a couple of hours. I use a cup of the buffalo sauce and 8 oz of Velvetta and it turns out just right for us.

    I am posting the recipe as written by Paula Deen but I made a few changes. I used shredded taco cheese instead of cubed cheddar cheese. I mixed in a cup of salsa instead of topping each serving. I also used regular tostitos instead of doritos to mix in. The salad is great and very quick to make on a busy night.

    With a full pantry, a freezer bag of meatballs, and a handful of pasta, you can make a really filling soup. Of course this soup can also be made with fresh or frozen veggies, canned was just what I had one night when I needed dinner in a hurry. ETA after a few reviews mentioned this: We like our soups very thick, more like stews than soups. If you like more liquid in your soup, you're going to want to add one to three cans of water according to the reviewers, because the pasta will soak almost all of the liquid while it cooks.

    In 2001 I attempted to duplicate Max & Erma's (well-known mid-west restaurant chain) chicken tortilla soup. It elicits favorable compliments every time that I serve it. Rather than prepare a time-consuming cream/milk base, I chose to use condensed soups. With the addition of the other ingredients, the end result is a tasty, spicy, flavorful southwestern soup.
