    I got this recipe out of one of those little coupon booklets that come with some of the recipe magazines. Not sure which one, but probably TOH or QC. I added the mushroom, simply because we love them. As empty nesters, I am always on the lookout for recipes that are already geared toward two servings. This recipe was one of those.

    This is another copycat version of Cracker Barrels hash brown casserole. I found this recipe in a book borrowed from a friend , dont remember the name. The recipe here is designed for a skillet that is also safe for the oven. If you dont have one, you can easily transfer the casserole to a baking dish after its done cooking on the stove.

    One of those old-fashioned supper club type recipes, complete with a smoky piano bar in the corner and an ashtray on every table. This recipe comes from the 1965 edition of "The Gourmet Foods Cookbook" published by the Culinary Arts Institute of Chicago, Illinois. And in fact, Shrimp de Jonghe was created in Chicago in the 1920s at the De Jonghe Hotel on Monroe Street in The Loop, either by the hotel owner himself or his chef, Emil Zehr. Unfortunately, the hotel was closed in the 1930s for, yup, violations of the Prohibition Act. I've reduced a little of the butter and replaced a tablespoon of it with olive oil, but this dish is still very rich, and may be prepared as an appetizer for 4 people as well.

    About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. I believe this is my first English recipe posted here but the fine English people have no cause for concern.

    Perhaps you can serve this as a Valentine dish! It is good at any time. Use a good quality PURE parmesan cheese. It costs more but is worth it. Grate your own then it is really fresh and the flavor comes through

    An easy dinner for two that won't heat your kitchen up as it cooks very quickly. Easily doubled for 4 if you have a large skillet. Boneless salmon fillets can be substituted for salmon steaks if you hate picking out the bones.

    This is something I created when I saw what was left from a bag of corn tortilla chips. Instead of throwing them out, I put them to good use, and I'm glad I did. This added a crunchy coating to chicken breasts, while the inside was nice and moist. You don't have to use corn tortillas if you don't want to. Use any style tortilla chip, or make your own. I've seen fish covered with a tortilla crust, but never chicken. Some call for eggs, flour, etc, but I just used Italian dressing for a marinade, and that was enough moisture to allow the chip mixture to stick. It also cut down on calories, because I used fat-free dressing. If you must use eggs, that's fine too. Play around with it, until you get what you like.

    Using fresh gorgonzola made right here in Oregon! If you live elsewhere, use the best quality gorgonzola available. Panko crumbs can also be made at home. Thyme in original recipe was replaced with parsley. NOTE: I live in Oregon, hence the alternate spelling of the recipe name. ;)

    So much Tex-Mex food calls for lots of oil and high fat foods. This was a recipe that I found on a pack of corn tortillas. I adjusted the recipe and this is the end result. Hope you enjoy! Update: 05/23/3009: This recipe was submitted to TOH and was published in the 2009 version of The Best of County Cooking.     My sister in law brought the following fresh salad (using organic produce from our local farmers' market) to a family function and I loved the simplicity. Her version was served with one of the Newman's Own brand store bought salad dressings. I don't normally buy store bought dressings so I found this lime vinaigrette recipe on Food Network. I modified it by intentionally omitting all the herbs. Try your favorite dressing, preferably a light vinaigrette. Anything too heavy will overpower the salad.
