Hot weather is upon us and I don't like to spend too much time in the kitchen heating it up. I like to eat simpler and fresher, so tasty, main-course salads are the ticket! This salad makes me feel so good eating it, bringing balance to my appetite and my health, hence the name.
This is not your average rice pudding. There's a fragrant, almost floral, waft of scent and flavor that is imparted to the creamy rice mixture by the ginger, lime and honey. The toasted coconut and rum are the kickers, though, making it over-the-top good!
Quick and easy to make, and healthy too. When it comes to these kinds of recipes, I like and enjoy the contrast of colours, because we, of ocurse, eat with our eyes first. Cooking time will include the cooking of the pasta, even though it has already been cooked by the time you go through the steps of the directions, below.
This quick and simple recipe came from my pantry, freezer and fridge. In other words, what I had on hand. The first thing is to start the water boiling for the pasta and once you have that bubbling your no more than 20 mins from a delicious, family pleasing, meal.
Shiver me timbers, mates! Barrels of Aborio Rice were plundered from an Italian trading vessel. One Eyed Jack, the ship's Spanish cook served these at Capt'n Morgan's table. They were so fine, the Capt'n rewarded him with a mug of his famous rum.

Try my saucy wench pizza, a new taste experience awaits you. A Thai inspired treat with a sweet chilli, ginger and lime sauce dressed with chicken, red peppers, mushrooms, black olives, green onion, mango and cheese. Garnished with fresh herbs and a drizzle of peanut sauce.
You may substitute your favorite pizza dough recipe or store bought dough, if desired.
Not your typical rum cake, and not your typical fruit cake, either. I used dark rum for this, so I'm not sure if light rum is going to be a good substitution or not.

The 'twist' being the addition of lime juice which adds a really fresh taste to an unbeatable ice cream combination. Use your favorite liquid honey, but Orange Blossom was really good in the version I made. This ice cream is very easy as you don't have to make a cooked custard as is traditional - and it's egg-free!
Rice pudding be an old and favorite thing. For the Raiders Of The Lost Pantry Contest I've added Caribbean flavors sure to please any pirate. I see no reason why some of the water couldn't be replaced with a splash of Capt'n Morgan's best but that be up to ye matey! The recipe, as written, do be fit for the family. I've used lime and coconut in part and yes that infamous song do be stuck in me head, Arrrrrrr.
