This is a nice twist on traditional pumpkin soup. Chipotle chiles give this soup a pleasant heat and smokiness without making it too spicy. Garnish with toasted pumpkin seeds or a light drizzle of pumpkin seed oil
This was an easy put together for a recipe I needed for one of my many pumpkins. When I write below medium pumpkin this is how I mean by it in relation to the other size pumpkin: Gigantic pumpkins are used for record breakers. There are people out there that want to set all kinds of regional and world records so they create the biggest size pumpkin you could possibly imagine. Big pumpkins are typically sold in many stores and are good for making those Jack-O-Lantern faces. Small and miniature pumkins are those that can fit into the palm of your hands and are no problem to carry. The miniature pumpkin si especially decorative, while the small pumpkin you could probalby put outside on Halloween with your other pumpkins to decorate your front lawn. the medium pumkin is somewhere in between the large and small pumpkins. Also, if you don't have chicken stock, you can use plain water and add 2 chicken bouillon cubes.
This is the pumpkin pie my mom has always made. I think she got the recipe out of the newspaper or something many years ago. The filling is closer to a pumpkin custard than a traditional pumpkin pie filling. Coeur d'Alene is a city in Northern Idaho, by the way ;)
This is a refreshing breakfast drink. A light desert. There are many different things you can do with this basic recipe. Different spices, ice cubes for a slushier drink, ice cream, vanilla yogurt. The possibilities are endless.
Pumpkin Bread enhanced with real maple syrup and plump golden raisins. This recipe makes a very large loaf that rises well and is a moist bread. I usually double the recipe. Delicious served presliced and spread with cinnamon cream cheese spread. Great for a buffet.
If you are a pumpkin lover like me, then here is an all-time winner.... I must have collected hundreds of pumpkin recipes over the years..this recipe from my 10 star cake collection...and it is just what the heading says, amazingly delicious...If desired these could be baked in mini loaf pans, but remember to adjust the baking to a less time, and also the chocolate chips could be replaced with chopped walnuts.
The addition of the pudding mix is what makes this special, it bakes out moist and rises high every time, if desired you could add a 1/4 cup grated coconut to the batter and the spices may be adjusted to taste -- you may also bake this in small mini loaf pans and reduce the baking time slightly --- for greasing pan see my recipe#78579
I use a heaping tablespoon of dried chili flakes and I add in cayenne pepper also, my family loves extreme spice, but you can adjust the heat level to suit you taste, the brown sugar and whipping cream tones down the heat quite a lot! A nice presentaion to serve to guests would be to serve the soup in roasted carved-out sugar pumpkins!
A combination of pumpkin, evaporated milk, cinnamon and ice cream make up this scrumptious drink for your holiday meal. *This can be made more diabetic friendly be using Splenda in place of the honey and fat free evaporated milk for the regular and if you can get reduced or sugar free ice cream, go with that, and you'll be smiling.
Autumn is the time when we typically serve pumpkin dishes, but this wonderful cake would be good year-round. It's maple flavor is also refreshing. I love maple and there's not a lot of anything out there with it in there. This cake is fancy enough to serve at a big dinner but simple enough to make for a week-night dinner.
This one has a shortbread type crust, which is thicker than the usual cheesecake crust. You could use your favorite graham cracker type crust instead. Apologies to whoever posted this originally on an old Food BBS. Don't know who it was.
This may be frosted with a cream cheese and powdered sugar mix, or pipe heavy whipped cream on before serving.
I have also made a glaze from cranberry sauce.
