    This is from www.worldspice.com, the site for World Merchants, an incredable spice and tea shop hidden below The Pike Place Market in Seattle. The owner, Tony Hill is a fanatic for good food. His spice blends are shipped un-ground if requested. I run just enough for each recipe through a black Braun coffee mill (Not the white one I grind coffee in.)minutes before use. I am slowly working my way through his shop. It is amazing how much I don't know about spices, but I am Learning.

    This is a rich, spicy soup taken from "Pike Place Market Cookbook" which took it from "The Chestnut Cookbook" whose author is Annie Bhagwandin. Annie and her husband, Omroa, can be found selling their wares at "Northwest Chestnuts" at Pike Place Market. A portion of their profits goes toward the promotion of environmentally sound agriculture and ALL proceeds from "The Chestnut Cookbook" go toward the promotion of tree crops.

    Modified from a recipe in a Pike Place Market Basket newsletter. Apricots and cherries have been fabulous in Washington this summer and this recipe is quick, easy and very yummy. Like all crisps and cobblers, this is very flexible. Blackberries or blueberries can be substituted for cherries, and peaches can be substituted for apricots (I add some cornstarch when using peaches as they generate more juices than apricots).

    Crispy on the outside, tender and moist inside, and the preparation and appearance are conversation starters! Can be prepped ahead, so these are great for entertaining (but they are one of my family's favorites for any dinner). Recipe is an amalgam of Crash Hot Potatoes from Jill Dupleix and Smashed Potatoes published around Easter in the Seattle Times.

    This is a fabulous stew that came from one of the Seattle Junior League cookbooks. I've tweaked it a bit over the years. It fills the house with an amazing aroma and tastes as good as it smells. This takes a while to make, so I often do it on a weekend afternoon and then reheat it later in the week. Although the recipe calls for dried sour cherries, I have also made it with dried bings.

    Kangaroo House Bed and Breakfast on Orcas Island, Washington (www.KangarooHouse.com) offers this as one of their specialty recipes. It is very filling and hearty, and I love the chewy texture of the grains. I can't reliably find wheat berries where I live so am not always able to prepare it exactly as written (I just increase the barley and rice to make up the difference, or add in some kasha or similar grain as a substitute.) I usually add a Tbsp or two of wheat germ, too. This is also good with dried cranberries/apricots/etc substituted for some of the raisins or with fruit (dried like dates or fresh like blueberries, yum!) served over the top at the end. This does not have anything sweet in the ingredients except the raisins; you may wish to top with honey, brown sugar, etc, although I also really like it just with butter and salt. I like cream on mine if I'm not going totally vegan, my kids like maple syrup. :)
