Diabetic friendly and pretty darned good too. *EDIT*: For some reason that I can't fathom the weight of the package in Canada is 42g but in the States it's 28g's and they seem to work exactly the same.
Adopted recipe. Don't let the looks of this throw you off!!!!! A healthy, light dessert or snack that just might satisfy your chocolate cravings without all the unwanted calories. If you can let it sit alittle bit before you eat it, go ahead. The flavors blend together more.

This has less sugar than some recipes, which gives it a rich chocolatey taste with cocoa rather than solid chocolate. That makes it easier to make and means this pudding has less fat than some. I got this from a friend and it quickly became an "old reliable" for me.
This fantastic rice pudding requires no baking, and each serving contains only 22% fat. I simply cannot put into words how deliciously creamy this pudding is. Don't let the tofu scare you off. If you like maple, you have to give this a try. I would recommend including the dried cranberries. They add even more depth and sweetness.
